Job Requirements
- high school education or equivalent
- one to two full years of employment in a related position
- advanced knowledge of principles and practices within the food profession
- ability to lift, push, pull and carry heavy items frequently
- ability to bend knees 5-10 times daily
- full mobility and ability to travel 30-50 feet regularly
- ability to stand continuously during preparation and service hours
- ability to hear equipment timers and communicate with staff
- ability to see product is prepared appropriately
- moderate comprehension and literacy for reading use records and special requests
- excellent comprehension and literacy for reading, writing and analyzing budget
- work inside 100 percent of the shift
- tolerate freezer temperatures of -10 degrees and front line temperatures above 100 degrees
Job Qualifications
- high school education or equivalent
- one to two years of experience in a related position
- advanced knowledge of food profession principles and practices
- experienced in management of people and food and beverage operations
- strong communication and organizational skills
- ability to maintain compliance with health and safety standards
Job Duties
- manage the daily production, preparation and presentation of all food for the hotel’s restaurant(s) and room service to ensure a quality, consistent product which conforms to all franchise standards
- manage human resources in the production and preparation areas of the kitchen to attract, retain and motivate employees while providing a safe work environment
- interview, hire, schedule, train, develop, empower, coach and counsel staff
- recommend and conduct performance and salary reviews
- provide open communication
- recommend discipline and termination as appropriate
- schedule and manage maintenance and sanitation of kitchen, equipment and related areas to ensure a healthy, safe environment meeting federal, state, corporate and franchise standards
- monitor, analyze and control all labor and food costs
- prepare reports, charts and schedules to ensure budgets are met or exceeded while maintaining or improving quality
- promote the Accident Prevention Program to minimize liabilities and related expenses
