Job Requirements

  • Culinary degree or equivalent training
  • Serve safe certificate
  • Must meet state and local food handler requirements
  • Must possess a valid food handler's permit
  • At least 5 years of progressively responsible experience in a high-volume, high-end food service environment (hotel or resort)

Job Duties

  • Support mission, vision, and goals of the organization, upholding and promoting company culture and vision
  • Design, plan, and oversee fine dining experience, including menus and presentation
  • Utilize food surpluses and leftovers, considering probable number of residents and popularity of dishes
  • Train kitchen staff in proper procedures
  • supervise and schedule staff
  • maintain associate records
  • Take weekly inventory of all dining service supplies and food, follow inventory policies, and place orders as needed
  • Direct food preparation by staff in compliance with food service rules, regulations, and guidelines
  • Ensure high standards of quality food production, nutrition and portion control
  • Work alongside kitchen personnel to ensure quality control and training
  • Establish and maintain proper sanitation and safety in food preparation areas
  • Consult with dietician on nutrition compliance and therapeutic diets
  • Demonstrate positive resident relations and support a positive dining experience for all levels of care
  • Maintain HACCP logs daily
  • Perform taste tests of cooked meals and specials for quality
  • Lead daily meal line up meetings to ensure food quality
  • Familiarize and train newly hired cooks and back-of-house personnel
  • Review menus, analyze recipes, determine food costs, labor and assign prices for catering profit
  • Resolve associate and resident concerns
  • Participate in food committee meetings, review feedback, initiate corrective actions
  • Organize special events and coordinate as necessary
  • Perform other duties as assigned
  • Attend in-service classes and staff meetings
