Job Requirements

  • Culinary degree or equivalent training
  • valid food handler's permit
  • serve safe certificate
  • minimum of 5 years experience in high-volume, high-end food service
  • knowledge of federal, state, and local food safety standards
  • ability to supervise and train kitchen staff
  • excellent organizational and communication skills
  • physical ability to perform kitchen duties

  • at least 5 years of progressively responsible experience in a high-volume, high-end food service environment such as hotel or resort

Job Duties

  • Support mission, vision, and goals of the organization, upholding and promoting company culture and vision
  • design, plan, and oversee fine dining experience including menus and presentation
  • utilize food surpluses and leftovers considering resident numbers and marketing conditions
  • train kitchen staff in proper procedures, supervise and schedule staff, maintain associate records
  • take weekly inventory of dining supplies and food, follow inventory policies, place orders as needed
  • direct food preparation by staff ensuring compliance with food service rules and regulations, maintain high standards of quality, nutrition, and portion control
  • establish and maintain proper sanitation and safety in food preparation areas
  • consult with dietician on nutrition compliance and therapeutic diets, collaborate with regional director on menu planning and food preparation
  • demonstrate positive resident relations and uphold facility quality care and service standards
  • maintain HACCP logs daily
  • perform taste tests of meals, lead daily meal line-up meetings to ensure food quality
  • familiarize and train newly hired kitchen personnel
  • review menus, analyze recipes, assign food and labor costs, price menu items for catering
  • resolve associate and resident concerns, participate in food committee meetings, review feedback for quality improvement
  • organize special events and parties as necessary
  • attend in-service classes and staff meetings
  • perform other duties as assigned
