Job Requirements
- Able to work days, nights, weekends and holidays
- Report to work on time and in proper uniform
- Physical ability to stand and walk for up to 10 hours
- Occasional lifting, pushing and pulling
- At least two years of culinary experience in a branded hotel preferred
- Culinary school experience a plus

Job Duties
- Operate kitchen department within budgetary guidelines
- Assist in the development and implementation of kitchen policies and controls
- Control food cost by training kitchen staff on proper food preparation and handling
- Complete or assist with administrative duties related to personnel and payroll
- Ensure kitchen staff adherence to uniform, grooming and appearance standards
- Assist with the development and conduct of training programs for kitchen staff
- Understand and enforce health department and hotel sanitation and food handling guidelines
- Comply with all recipes and product specifications and ensure staff compliance
- Maintain effective communication within kitchen and respond to staff suggestions
- Ensure kitchen staff awareness of food and beverage and hotel operations
- Attend scheduled meetings and meet regularly with kitchen staff
- Maintain effective working relationships with food and beverage management and hotel departments
- Conduct regular inspections of kitchen, dishwashing areas and coolers
- Assist in menu development
- Inspect fish, meat and poultry upon arrival for freshness and compliance
- Prepare reports, proposals and other communications as assigned
