- Ability to prepare complex culinary dishes
- Experience in menu planning and inventory management
- Strong leadership and training skills
- Knowledge of culinary trends and heart healthy cooking
Job Duties
- Collaborate with the Executive Chef to research and design new menu plans focusing on current culinary trends and heart healthy cooking
- Keep recipes, files, and quantity reports up-to-date
- Inventory supplies and prepare purchasing lists weekly with appropriate forms and computer data entry
- Assure daily special menus are prepared and presented on-time by setting production schedules
- Oversee work of cooks, culinary assistants, and serving staff assisting in special preparations
- Provide training to staff as necessary
- Prepare complex and high skilled culinary dishes following production guidelines
- Adjust recipes with approval from Executive Chef
- Conduct research on customer preferences and update menu offerings accordingly
- Act as lead person in the production area and relieve for Chef/Manager when necessary
