  • Ability to prepare complex culinary dishes
  • Experience in menu planning and inventory management
  • Strong leadership and training skills
  • Knowledge of culinary trends and heart healthy cooking

Job Duties

  • Collaborate with the Executive Chef to research and design new menu plans focusing on current culinary trends and heart healthy cooking
  • Keep recipes, files, and quantity reports up-to-date
  • Inventory supplies and prepare purchasing lists weekly with appropriate forms and computer data entry
  • Assure daily special menus are prepared and presented on-time by setting production schedules
  • Oversee work of cooks, culinary assistants, and serving staff assisting in special preparations
  • Provide training to staff as necessary
  • Prepare complex and high skilled culinary dishes following production guidelines
  • Adjust recipes with approval from Executive Chef
  • Conduct research on customer preferences and update menu offerings accordingly
  • Act as lead person in the production area and relieve for Chef/Manager when necessary
