Job Requirements
- Must be reliable and responsible
- Ability to speak Spanish preferred
- Ability to read, listen, and communicate in English both verbally and in writing
- Basic math skills to understand measurements, requisition amounts, and portion sizes
- Ability to operate kitchen appliances such as stoves, ovens, mixers, etc.
- Ability to grasp, lift, carry, or otherwise move or push goods on a hand cart weighing up to 50 pounds regularly
- Ability to perform duties in confined spaces
- Ability to remain on feet for long periods of time
- Ability to perform duties within extreme temperature ranges
- Able to work mornings, swing, nights, holidays, and weekends
Job Qualifications
- Bachelor's degree in related field or 5 years of experience in a similar position
- 2-year minimum in leadership role overseeing minimum of 5 people
- Ability to obtain any government required license or certificates
- CPR certification or first aid training preferred
- Must obtain TABC & Food Handlers Certification prior to beginning work
Job Duties
- Coordinate all food production needs and food presentation operations for the banquets
- Ensure the production of high quality food for the banquets as well as all other food outlets of Moody Gardens
- Maintain a high quality image through effective housekeeping, maintenance, and sanitation in areas of responsibility
- Maintain and evaluate existing food concepts and the development of creative new food concepts which ensure the highest quality food and profitability
- Operate within the budgeted guidelines, and maintain food cost percentages
- Orient new employees for which you are in charge and coordinate internal training and developmental programs when appropriate
- Implement and support control procedures within the department
- Staff kitchen to meet kitchen responsibilities
- Ensure good safety practices of kitchen employees and assist in the maintenance of proper emergency and security procedures
- Operate in compliance with all Local, State, and Federal laws and government regulations
- Assist Executive Chef with kitchen operations and banquets
- Estimate daily production needs on a weekly basis and communicates production needs to kitchen personnel daily
- Supervise and coordinate activities of cooks and workers engaged in food preparation
- Any and all other duties as assigned
