Job Requirements
- High school graduate
- Ability to speak, read, write, and comprehend English
- Three years of cooking experience in professional kitchen
- Experience with saucier, prep, banquet, pantry, and hot line
- Kitchen management experience
- Working knowledge of basic sauce groups, soup preparation, food products, cooking temperatures, banquet production, and sanitation standards
- Ability to work on feet for long hours
- Ability to lift up to 50 pounds
- Ability to work in hot kitchen environments
- Flexible schedule availability including weekends, holidays, and split shifts
- Clean and well-maintained uniform
- Physical ability to maintain fast pace of work
- Compliance with safety training and hazard reporting
Job Qualifications
- High school graduate
- Three years of professional cooking experience including saucier, prep, banquet, pantry, and hot line
- Experience in kitchen management
- Knowledge of five basic sauce groups and soup preparations
- Understanding of food products, cooking temperatures, banquet production, and sanitation standards
- Ability to communicate effectively in English
- Certification as a Professional Food Manager preferred
Job Duties
- Work a flexible schedule including weekends, holidays, and split shifts
- Arrive to work on time consistently
- Maintain proper uniform standards
- Attend required training, safety courses, and meetings
- Report and follow up on safety hazards
- Consult with Executive Chef on menu and daily specials
- Oversee kitchen personnel to ensure production standards
- Maintain high sanitation and safety training
- Train personnel on kitchen equipment and safety features
- Manage food and labor costs
- Exercise portion control
- Assist line cooks with daily specials and employee meals
- Work in various kitchen areas as needed
- Direct utility personnel cleaning activities
- Coordinate with servers for proper procedures
- Communicate menu and specials information to servers
- Secure and properly use kitchen equipment and food
- Close kitchen ensuring cleanliness and security
- Supervise food-related events in absence of Executive Chef
- Assist with food inventory and scheduling
- Order produce and assist with administrative tasks
- Become a Certified Professional Food Manager
- Perform additional jobs as assigned by Executive Chef
