The Sous Chef at Mother Wolf Miami plays a pivotal role within the kitchen hierarchy, working closely alongside the Executive Chef and Executive Sous Chef to manage the daily operations of the kitchen. This leadership role requires significant culinary skill, organizational capability, and the ability to oversee and coordinate a diverse kitchen staff. Job Requirements
- High school diploma or equivalent
- valid Food Handler Certificate
- minimum two years culinary experience in a restaurant setting
- ability to stand and exert mobility for extended periods
- ability to bend, stoop, squat, and stretch to fulfill cleaning tasks
- ability to bend or lift 50 pounds or more
- capacity to work in hot kitchen environments and handle cleaning materials
Job Qualifications
- At least two years’ experience in a full-service, moderate to high volume restaurant
- exceptional communication skills
- ability to focus, multitask, and work well under pressure
- organized, self-motivated, and proactive with strong attention to detail
- ability to work flexible schedules including evenings, weekends, and holidays
- knowledge of Italian and Roman cuisine is preferred though not mandatory
Job Duties
- Assist Executive Sous Chef and Executive Chef in supervising back of house staff and overseeing receiving, storing, prepping, and cooking
- maintain updated and accurate recipes and costing for all dishes
- oversee methods of preparation, portion sizes, timeliness of food preparation, and control food usage to minimize waste
- ensure cleanliness of the kitchen area
- promote teamwork and quality service through daily communication and coordination with restaurant team
- assist in sourcing supplies and equipment ensuring best quality and pricing
- plan, assign, and coordinate work for the line cooks team
- supply recipes and suggest methods and procedures for line cooks
- maintain accurate and detailed production records
- participate in preparing food items on the line for service
- hold a valid Food Handler Certificate
