Job Description
Estancia La Jolla is a distinguished AAA Four Diamond boutique hotel located in Southern California, offering guests a unique blend of history and luxury. The property, which honors its origins as a late 1800s ranch, features hacienda-style architecture, lush gardens, and scattered artwork that create an inviting and tranquil escape for visitors. With 210 casually elegant rooms and suites, Estancia La Jolla delivers an atmosphere that feels like home yet provides the upscale amenities and services that discerning travelers expect. This hotel is a proud member of the Noble House Hotels and Resorts family, a collection of luxury properties throughout the Americas, recognized for exceptional service and memorable guest experiences.
The role of the Sous Chef at Estancia La Jolla is critical in upholding the hotel’s culinary excellence. This position is responsible for managing all aspects of food preparation, production, quality control, menu planning, and presentation across the property’s dining venues. The Sous Chef supervises a team of chefs de partie and other culinary staff, ensuring that food service operations not only meet but exceed guest expectations. In addition to delivering outstanding guest service, the Sous Chef manages cash flow and profitability by budgeting and controlling expenses. Maintaining compliance with safety, sanitation, and health regulations is a vital aspect of the role.
As a key leader within the culinary department, the Sous Chef plays a significant role in hiring, training, and mentoring team members to build a skilled and motivated workforce. This individual encourages teamwork and communication to foster a positive work environment while driving departmental success. The Sous Chef closely collaborates with Food & Beverage managers to innovate menus that incorporate current food trends and regional flavors, keeping the hotel’s culinary offerings fresh and exciting for guests.
This is an excellent opportunity for a culinary professional who thrives in a fast-paced, high-volume environment and values creativity, leadership, and guest satisfaction. The ideal candidate is a people-oriented individual with patience and empathy, focused on crafting memorable dining experiences and solving challenges effectively. Estancia La Jolla’s award-winning culture, recognized as a Top Workplace in San Diego and nationwide, supports developing talent and maintaining a supportive atmosphere.
The employment package includes competitive pay along with comprehensive benefits such as health insurance, matching 401(k) plans after one year, earned wage access, paid time off, complimentary parking, and meals. The hotel also offers team member and family discounts across its portfolio, giving employees excellent perks beyond their salary. Job shifts include morning, evening, weekend, and holiday rotations, highlighting the position’s dynamic nature and operational importance.
Estancia La Jolla Hotel & Spa is committed to diversity, equity, inclusion, and accessibility, encouraging a work environment where every individual can succeed as their authentic self. Candidates who are passionate about hospitality, culinary excellence, and working in a collaborative team setting are encouraged to apply. The hotel ensures equal opportunity employment regardless of race, gender, sexual orientation, veteran status, disability, or other protected characteristics. Joining Estancia La Jolla means becoming part of a family-like culture dedicated to quality and exceptional guest experiences.
