The Sous Chef at Kings Card Club holds a critical leadership position within the culinary team, working directly under the guidance of the Executive Chef and Head Chef to manage daily kitchen operations. This role demands a combination of culinary expertise, supervisory acumen, and hands-on involvement to ensure that all food prepared adheres to the highest standards of taste, presentation, and quality. The Sous Chef is responsible for supervising kitchen staff, assisting with menu planning, recipe development, ordering, and maintaining proper kitchen equipment. While the position primarily focuses on leadership and management tasks, the Sous Chef also participates in kitchen prep and dishwashing duties when necessary, demonstrating a commitment to teamwork and operational excellence. This role is essential in maintaining smooth kitchen flow, meeting budgetary goals through cost control, and ensuring that all sanitary and safety regulations are strictly observed.

In addition to overseeing food preparation and quality control, the Sous Chef works closely with food and beverage management to sustain an exceptional level of culinary service that meets or exceeds the expectations of members and guests. Job Qualifications

  • minimum 1-2 years of supervisory experience in a high-volume kitchen or food service environment
  • bachelor’s degree or related culinary degree preferred
  • experience with food and labor cost control

  • knowledge of premise and liability accountability
  • previous contract-managed service experience desirable
  • graduate of culinary school or equivalent work experience
  • current ServSafe Manager certificate within 90 days of hire

  • proficiency with mathematical concepts including fractions, percentages, ratios, and proportions

Job Duties

  • assist with planning menus for all food outlets in the club
  • assist the Executive Chef and Head Chef with coordinating the work of cooks and other kitchen employees to ensure food preparation is economical and within budgeted labor costs
  • implement safety, sanitation, and accident prevention training for food preparation staff
  • develop standard recipes and plate presentation techniques to maintain high quality and minimize food costs
  • cook or supervise the cooking of dishes requiring skillful preparation
  • support training and professional development for kitchen staff
  • evaluate product quality and assist in ordering food products and kitchen supplies
  • maintain kitchen cleanliness and sanitation standards
  • monitor food and supply waste and control theft
  • participate in food and beverage staff and management meetings
  • coordinate food production for special events
  • ensure service standards align with established principles
  • follow cleaning and maintenance schedules for kitchen and equipment
  • complete inventory tasks as assigned
  • coach and counsel kitchen staff
  • provide shift reports to management
  • support safe work habits and a safe working environment
  • perform prep tasks such as portioning and chopping
  • provide dishwashing or cleaning support when needed
