This role is a full-time management position within the Food and Beverage category, offering an annual salary ranging from $64,000 to $86,000, with eligibility for performance-based bonuses. The individual in this role will actively demonstrate their culinary talents while managing and leading the kitchen staff to ensure a consistently high-quality food product that meets the rigorous standards of the JW Marriott brand. The Kitchen Manager will work closely with the Executive Chef and other culinary team members to prepare and cook a diverse array of food items, from everyday meals to special functions and guest requests. Leadership responsibilities include supervising all kitchen staff, managing food storage and purchasing standards, and overseeing the quality control of raw and cooked food products. Additionally, the role involves developing innovative culinary concepts and decorative food displays that enhance the guest experience. Job Requirements

  • High school diploma or GED
  • 4 years experience in culinary, food and beverage, or related area
  • OR 2-year degree from an accredited institution in Culinary Arts, Hotel and Restaurant Management, or related major
  • 2 years experience in culinary, food and beverage, or related area
  • Ability to perform culinary tasks and lead kitchen operations
  • Knowledge of food safety and sanitation standards
  • Strong leadership and communication skills
  • Ability to work full time in Orlando, Florida
  • Willingness to work flexible shifts including weekends and holidays
  • Eligible to receive bonus

Job Duties

  • Manage kitchen shift operations and ensure compliance with all food and beverage policies, standards and procedures
  • Estimate daily production needs weekly and communicate production needs to kitchen personnel daily
  • Assist Executive Chef with all kitchen operations and preparation
  • Prepare and cook foods of all types for daily service and special functions
  • Develop, design, or create new culinary applications, ideas, relationships, systems, or products including artistic contributions
  • Maintain purchasing, receiving and food storage standards
  • Ensure compliance with food handling and sanitation standards
  • Perform duties of kitchen managers and employees as necessary
  • Recognize superior quality products, presentations and flavor
  • Ensure compliance with all applicable laws and regulations
  • Follow proper handling and temperature of all food products
  • Operate and maintain department equipment and report malfunctions
  • Check quality of raw and cooked food products to ensure standards are met
  • Supervise and coordinate activities of cooks and food preparation workers
  • Lead shifts while preparing food items and executing requests
  • Utilize interpersonal and communication skills to lead, influence and encourage others
  • Advocate sound financial and business decision making
