Founded in 1998 by renowned restaurateurs Paul Fleming and Bill Allen, the original location in Newport Beach, California set the stage for what has become a nationally recognized brand. Beyond premium steaks, Fleming's excels in offering a curated selection of wines, providing guests an unparalleled culinary journey where food and wine seamlessly complement each other.

At Fleming's, the core values are deeply embedded in its Principles & Beliefs which serve as the foundation for every action and decision within the restaurants. This commitment shapes a passionate team culture where every employee is supported, encouraged, engaged, and celebrated. The company prides itself on fostering an inclusive and positive work environment, bolstered by first-class training programs designed to help team members learn, grow, and advance their careers. Fleming's is more than just a workplace; it is a community where the contributions of every individual are recognized and valued.

The role of Sous Chef at Fleming's Prime Steakhouse & Wine Bar is instrumental in bringing this vision to life. As a Sous Chef, you will be essential in ensuring that every guest's visit is a memorable celebration of high-quality food, excellent wine, and personalized service. You will uphold the brand's promise by maintaining top-tier employee standards through effective leadership in the kitchen. This includes maintaining a fully staffed kitchen, fostering an inclusive and supportive environment, and developing kitchen associates to their full potential.

Additionally, the Sous Chef is responsible for implementing robust security protocols to guarantee the ongoing safety of both employees and guests. Managing restaurant results through supervising the set-up and food production areas ensures productivity is maximized and waste minimized. The role requires you to oversee line checks, recipe adherence, food testing, training, expo management, cooking times, and overall food quality.

A focus on presenting quality food is paramount, with all menu items crafted according to exact recipes and presented to the high standards Fleming's customers expect. Enforcing sanitation and safety protocols reflects a broader passion for excellence and ensures a clean, safe, and welcoming kitchen environment.

Fleming's Sous Chefs live by the company’s Principles & Beliefs that emphasize the inherent goodness in people and the importance of fostering a sense of belonging and significance. By being a role model, you will help nurture a passionate and fun culture within your restaurant. The company is committed to supporting its employees in living full, balanced lives and being recognized as an employer of choice in the community. Compensation varies by location and is based on a 45-hour work week that includes overtime. In addition to a rewarding career, employees benefit from a range of comprehensive benefits including medical, dental, vision, and 401k plans.
