The role of Sous Chef at Henrico Doctors' Hospital is a key leadership position within the food service department, focusing on overseeing daily food production operations for Patient Food Service, Physicians Dining Room, Cafeteria, and Catering services. This position requires an individual with strong culinary expertise and leadership capabilities to ensure all food items meet rigorous standards of quality, safety, and sanitation, consistent with HACCP and regulatory agency guidelines. The Sous Chef will be responsible for supervising staff, assisting in hiring, counseling, coaching, and developing team members, as well as maintaining accurate staff documentation including evaluations and disciplinary records.
In addition to operational oversight, the Sous Chef will collaborate with the team to develop menus for various dining services and special catering events, ensuring that culinary offerings are appealing, nutritious, and aligned with patient and guest needs. The role also includes coordinating large catered functions, managing employee attendance and timekeeping through systems like KRONOS, and promoting exceptional patient interactions that support the hospital's commitment to unparalleled patient service. Job Requirements
- Associates Degree in Culinary Arts or related field preferred
- Minimum of 3-5 years professional culinary leadership experience
- Knowledge of HACCP and regulatory agency food safety standards
- Effective supervisory and team leadership skills
- Experience in menu development and catering coordination
- Ability to document staff records accurately
- Food Service Manager’s Certification within 90 days of hire
Job Qualifications
- Associates Degree in Culinary Arts from an accredited program preferred
- Associates Degree or Technical Degree in a related field preferred
- Minimum of 3-5 years professional culinary leadership experience in high volume, fine dining restaurant, country club, hotel, or healthcare organization
- Comprehensive knowledge of food and catering trends focusing on quality, sanitation, production, and presentation
- Food Service Manager’s Certification required within 90 days of hire
