Sushi-san is an exciting new dining destination that has recently arrived in Nashville from Chicago, bringing its renowned flavors and culinary expertise to the vibrant Music City. As the fourth location of Sushi-san and the first outside of Chicago, this establishment is rapidly gaining recognition for its commitment to serving the freshest fish seven days a week, prepared by Master Sushi Chef Kaze Chan. Sushi-san offers an impressive menu featuring signature maki rolls, handrolls, San-Sets, nigiri, sashimi, sizzling rice dishes, and binchotan robata grilled specialties. Joining the Lettuce Entertain You Restaurants family, Sushi-san Nashville is now hiring for a Sous Chef position with 2 to 3 years of sous chef experience, particularly in a full-service restaurant setting. The Sous Chef at Sushi-san Nashville will play a critical leadership role in the back of house operations, ensuring that the kitchen runs smoothly and efficiently. This position offers a competitive salary ranging from $55,000 to $75,000 per year and includes a comprehensive benefits package. Job Requirements
- 2-3 years of sous chef experience
- Ability to lead and manage kitchen staff
- Experience in Japanese cuisine or sushi preparation is a plus
- Willingness to work varied shifts including early mornings, late nights, weekends and travel
- Ability to move and lift up to 50 pounds
- Strong communication and organizational skills

Job Duties
- Run BOH shifts and ensure effective and efficient BOH operations including food prep and cooking
- Ensure adequate inventory levels of food and supplies
- Supervise kitchen, dish and all other BOH teams
- Lead BOH pre-shift meetings and participate in line, temp and cooler checks and food tastings
- Partner with GM and designated managers/chefs to regularly review and maintain recipe books
- Perform regular line checks to ensure quality of all menu items
- Purchase and order food products and supplies including daily orders
- Assist in tracking and controlling food costs
- Ensure effective communication of food production and timing issues between FOH and BOH
- Partner with GM and management to interview, hire, onboard, train, supervise and develop BOH employees
- Model and promote teamwork across all teams
- Use tact and good judgment in dealing with guests, vendors and employees
- Work varied shifts including early mornings, late nights, weekends and multiple sites with or without overnight travel
- Move and lift up to 50 pounds occasionally
