Avli is currently seeking a skilled and adaptable Sous Chef to join our talented culinary team. This role is designed for an individual who thrives in a high-volume, fast-paced restaurant environment and is comfortable flexing between different restaurant locations as operational needs demand. The successful candidate will play an essential role in back-of-house management, leading the kitchen staff and ensuring the seamless execution of culinary operations. This includes upholding company standards for food quality, minimizing waste, and controlling labor costs while motivating team members and fostering a collaborative and inclusive work environment.

As a Sous Chef at Avli, you will be responsible for managing, training, and scheduling kitchen staff, overseeing food preparation, maintaining inventory controls, and ensuring all dishes meet precise recipes and presentation standards. Your experience in various cooking techniques such as knife skills, grilling, sautéing, and sauce and soup making will be vital. Additionally, you will be expected to demonstrate professional communication skills and a leadership presence throughout kitchen service. Familiarity with restaurant management software like Toast POS and 7shifts, as well as compliance with food safety certifications including Illinois Food Handler and City of Chicago Food Manager Certificate, are required.

This position demands a dynamic individual who embodies the philosophy of a working manager—engaging hands-on in food preparation, coaching the culinary team, and addressing service and culinary concerns with professionalism and punctuality. Organizational responsibilities also extend to monthly inventory, supply ordering, maintaining employee files, assisting in hiring and onboarding procedures, and ensuring compliance with all health and safety regulations.

Candidates interested in this role must be flexible with their scheduling, as the position requires working various shifts, including holidays, nights, and weekends. The role also involves lifting up to approximately 50 pounds and being comfortable operating in a bustling kitchen environment.

Job Requirements

  • Must be available to work various hours, days, and shifts, including holidays, nights, and weekends

Job Duties

  • Lead and manage Avli back of house service, motivate the culinary team promoting a positive, inclusive work environment
  • Adhere to company standards by ensuring food quality and minimizing waste, maintain quality controls, and minimize food and labor costs
  • Ensure that all staff demonstrate technical skills, correct, coach, and counsel where necessary
  • Assist with the hiring, scheduling, and training of Avli staff providing guidance on proper cooking techniques, safety procedures, and sanitation practices
  • Maintain leadership presence during service, embody the Avli philosophy of a working manager on the line and prepping for service
  • Assist with weekly unit agenda meeting and maintain an open line of communication with fellow managers and company leadership
  • Address service and culinary concerns with punctuality and professionalism
  • Ensure all food items are prepared and served in accordance with established recipes, portion control guidelines, and presentation standards
  • Assist with location inventory each month or as required
  • Assist with general supply and food ordering
  • Maintain detailed employee files, hiring and I9 verification, documented corrective actions per company procedures
  • Execute closing procedures including cleaning of kitchen, securing product, ensuring product is labeled, covered, and stored correctly
  • Monitor staff action to ensure that staff is in compliance with all health-safety laws and regulations
  • Monitor all areas of the restaurant on an ongoing basis and take appropriate steps to ensure facilities meet standards, coordinate repairs where necessary
