Job Description

The Pfister Hotel in Milwaukee is a historic and iconic hospitality establishment that has been a symbol of gracious service and impeccable style for nearly 130 years. Built in 1893, this luxurious hotel is one of the best in Milwaukee and across the Midwest, consistently recognized for its commitment to excellence. The Pfister holds a prestigious AAA Four Diamond hotel status, maintaining this designation for 46 consecutive years, an achievement shared by only 11 properties in North America since the inception of the Diamond Rating program in 1976. As part of The Marcus Corporation’s Marcus Hotels & Resorts division, The Pfister benefits from a rich 60-year legacy of operational and service excellence. Marcus Hotels & Resorts manages a portfolio of 15 unique and stylish hotels and resorts across the United States, dedicated to creating extraordinary experiences for both guests and employees.

The Pfister is currently seeking a talented Sous Chef to join its dynamic culinary team. This full-time, salaried leadership role is ideal for professionals passionate about delivering fresh, flavorful, and consistent meals in a fast-paced, casual dining environment. The Sous Chef will play a vital role in supporting the hotel’s culinary operations by supervising kitchen staff, overseeing daily kitchen activities, and ensuring every dish adheres to the highest standards of quality, freshness, and presentation. Responsibilities include preparing breakfast, lunch, and light dinner items while maintaining consistency and superior quality, mentoring and training cooks and prep staff, and assisting with menu planning and daily specials.

This position also involves managing inventory, food ordering, receiving, and storage, while strictly enforcing cleanliness, safety, and sanitation standards to maintain a safe kitchen environment. The Sous Chef will collaborate with the broader hotel team to support company-wide culinary initiatives and contribute to the continued success and stellar reputation of The Pfister Hotel. The ideal candidate will bring at least two years of supervisory experience within a café, casual dining, or hotel kitchen environment, strong leadership and communication skills, and a proven ability to manage breakfast and lunch service operations effectively.

In return for your dedication, The Pfister offers an attractive range of benefits designed to support your growth and well-being. These include complimentary well-balanced meals during every shift, room discounts at Marcus Hotels & Resorts and Historic Hotels of America properties, and exclusive savings at restaurants, lounges, golf courses, ski resorts, and spas affiliated with Marcus Hotels & Resorts. Additionally, employees enjoy discounted parking, two-for-one movie ticket offers for Marcus Theatres, and career advancement opportunities across various properties while retaining continuous service credit.

The role also provides early wage access, paid time off, company-paid life insurance, and options for medical, dental, and vision insurance after 30 days of employment. The Pfister fosters a workplace culture rooted in inclusivity and equal opportunity, embracing individuals from diverse backgrounds committed to the shared goal of guest satisfaction and operational excellence. As a part of this historic and beloved hotel, a Sous Chef at The Pfister will have the chance to further their culinary career while upholding a grand tradition of hospitality elegance and exceptional service.
