Job Requirements
- Minimum high school diploma or equivalent
- At least 2 years of experience in fine-dining restaurant service
- Court of Master Sommeliers Level 1 certification
- Must be 21 years of age or older
- Ability to work varied shifts including weekends and holidays
- Able to maintain licenses or work permits as required
- Strong communication and interpersonal skills
- Ability to work in a fast-paced and loud environment
- Maintain a professional appearance and hygiene
- Ability to lift and maneuver at least 30 pounds
- Comfortable working in a smoking environment
- Proficient in POS systems
- Fluent English speaking and writing skills
- Physical ability to stand, walk, sit, reach, climb, balance, stoop, stretch, bend, kneel, crouch, or crawl as needed for job functions.
Job Qualifications

- Applicants must be 21 years of age or above
- Cigar knowledge a plus
- Requires a minimum of 2 years of previous work experience in a fine-dining restaurant
- 2 years of sommelier experience is preferred
- Court of Master Sommeliers Level 1 certification required
- Candidates must exhibit wine, beverage and advanced service knowledge including wine service, champagne, mixed cocktails, cordials, after dinner drinks, upselling, and tableside service
- Must be able to obtain and maintain any licensing or active work cards required for this position at all times
- Willing to work in a loud and fast-paced environment
- Consistently maintain a well-groomed appearance, posture and hygiene deemed by management
- Makeup, technique and style should stay current and in line with current fashion standards and trends as deemed by management
- Experience in bottle service preferred but not required
- High school diploma or above
- Fluent spoken and written English
- Proficient in POS software.
Job Duties
- Greet guests in a positive, friendly manner with eye contact and intention
- Communicate the needs of guests to co-workers, kitchen, and management
- Actively participate and contribute to pre-shift meetings
- Have complete knowledge of all food menu items, specifications, and allergies
- Display mastery in understanding and exceptional communication of the wine list, beer list, and cocktail offerings
- Form, grow, and maintain relationships with members and guests for repeat business
- Consistently follow sequence of service utilizing all proper procedures standardized by the room management
- Participate in a regular inventory for all beverages and supplies
- Update inventory locations and bin labels whenever wines are moved
- Eliminate waste by monitoring employees on pour levels and proper storage
- Set-up and train employees on wine, beverage service, and knowledge
- Periodically lead and host wine and beverage related classes
- Enforce proper beverage service standards for all employees during service
- Assist with stocking wine prior to and after service
- Set-up and break-down all by-the-glass and wine pairing areas
- Prior to service, organize all event wines expected to be served during the service period
- Assist with placing beverage orders at the end of service or at a specified time during service
- Work closely with the General Manager to ensure organization and maintenance of wine service spaces
- Assist with programming and formatting bin numbers and wine information into the POS systems accurately
- Attend regular group meetings
- Assist with moving chairs and tables as needed based on the floor plan
- Perform table maintenance by checking on guests throughout service
- Complete opening and closing side work
- Maintain health code standards
- Maintain table cleanliness utilizing a silent service approach
- Bid farewell to guests, using guest's name when known, and encourage them to return
- Maintain a level of professionalism
- Anticipate guests' needs and respond appropriately with a sense of urgency
- Work as a team, assisting all guests' and employees' needs and inquiries
- Perform all other job-related duties as requested
- Be familiar with all hotel services/features and local attractions/activities to respond to guest inquiries accurately
- Maintain working knowledge of designated glassware and garnishes for each drink
- Complete opening, closing, and ongoing side duties such as folding/stacking napkins, polishing glassware, stocking glassware, restocking supply cabinets and service stations, cleaning and inspecting cleanliness and condition of assigned station and service areas
- rectify any deficiencies.
