The Sommelier role at Schulte Hospitality Group is a dynamic and service-oriented position pivotal to enhancing the beverage experience across SHG's fine dining and hotel restaurant environments. The Sommelier will lead, curate, and continuously elevate the entire beverage program, which includes wines, spirits, non-alcoholic beverages, and specialty coffee and tea. This role requires a deep knowledge of wine regions, varietals, producers, and price points to create a diverse and compelling wine list that aligns with the restaurant concept and brand standards while meeting guest expectations.
Additionally, the Sommelier will collaborate closely with vendors and distributors to source and negotiate products while maintaining strong relationships that support cost efficiency, quality, and exclusivity. The position involves planning and executing wine-related events such as wine dinners, producer tables, and seasonal tastings to drive revenue and engage guests. Financial accountability is a key component, with responsibilities including managing beverage cost of goods sold (COGS), optimizing inventory investments, minimizing waste, and working with food and beverage leadership on pricing strategy and margin analysis.
On the floor, the Sommelier will provide exceptional beverage service, offering expert guidance to guests through wine selections, pairing recommendations, and detailed tasting notes that elevate the overall dining experience. The role also requires a polished, warm, and approachable presence reflecting SHG's service culture. Training and development are integral, as the Sommelier will coach and educate front-of-house staff on wine and beverage knowledge, service standards, food and wine pairing, and upselling techniques to foster a knowledgeable and confident team.
Operationally, the Sommelier manages wine and spirits inventory, ensuring accuracy in counts, proper storage, and rotation while maintaining up-to-date and accurate wine lists. Compliance with all state and local alcohol service regulations, including responsible service certifications, is mandatory. The Sommelier must also uphold the highest standards of safety, health, and hygiene in alignment with company and regulatory requirements.
This role demands a minimum of a Court of Master Sommeliers Certified Sommelier (Level 2), WSET Level 3 Award, or ISG Certified Sommelier credential with advanced certifications highly preferred. A minimum of three years of beverage service experience in upscale, fine dining, or luxury hotel environments with program ownership or leadership responsibilities is required. Preferred candidates will also have a bachelor's degree in hospitality, business, or a related field or an equivalent combination of education, certification, and experience. Strong sales, communication skills, and a passion for hospitality are essential, as is proficiency with POS and inventory systems like Toast and MICROS.

Job Requirements
- Minimum Court of Master Sommeliers Certified Sommelier (Level 2), WSET Level 3 Award, or ISG Certified Sommelier credential
- At least three years of beverage service experience in upscale or luxury settings
- Ability to manage and grow a wine program

Job Duties
- Curate, maintain, and continuously elevate the wine and full beverage program, including wine, spirits, non-alcoholic beverages, and specialty coffee and tea ensuring alignment with restaurant concept, brand standards, and guest expectations
- Develop and manage the wine list with breadth across regions, varietals, producers, and price points
- Source, evaluate, and negotiate with wine and spirits vendors and distributors maintaining relationships that support cost, quality, and exclusivity
- Plan and execute wine dinners, producer table events, seasonal tastings to drive revenue and engagement
- Collaborate with Culinary and Beverage leadership to develop seasonal pairings and menu-driven recommendations
- Own beverage cost of goods performance and meet budgeted beverage cost percentage targets
- Assist with ordering and purchasing decisions to optimize inventory, minimize waste, and support profitability
- Provide exceptional wine and beverage service on the floor, including tableside presentation and decanting
- Educate and guide guests through wine selections and tasting notes
- Train, coach, and develop front-of-house staff on wine and spirits knowledge and upselling techniques
- Manage wine and spirits inventory including counts, storage, rotation, and par levels
- Ensure compliance with all alcohol service regulations and maintain safety, health, and hygiene standards
