The role available is a Smokehouse Operator position at Hatfield, focused on monitoring the cooking and chilling processes of products through the smokehouse department. The successful candidate will be responsible for ensuring that all products are cooked precisely per company specifications and chilled properly in compliance with food safety regulations. This involves close monitoring of the smokehouses as well as the brine chillers, handling product transportation to and from the smokehouse floor, and maintaining accurate documentation through weight sheets and production charts.

A crucial part of this role includes assisting with frequent inspections related to Standard Sanitary Operating Procedures (SSOP) to identify and address any potential deficiencies. Operators must be capable of standing up to extreme temperature fluctuations typically experienced within the smokehouse environment. The position demands physical endurance to continuously push and pull heavy product loads—sometimes up to 1500 lbs with assistance from a rail system—and to perform tasks such as loading and unloading carts and smokehouses.

Furthermore, the Smokehouse Operator is required to understand and follow oral and written instructions effectively, consume production data into SAP software, and contribute to general housekeeping and production assistance as needed. The role requires basic math skills and literacy in English for reading and writing, ensuring clear communication and accurate recordkeeping. Monitoring oven cycles, testing product samples, and identifying product condensation are also important responsibilities that ensure product integrity and safety.

Job Duties

  • Monitor the smokehouses to ensure that all products are cooked to proper company specifications
  • monitor all chilling of products that come through the department to ensure that they are chilled in compliance with company specifications
  • load and unload the smokehouses and brine chillers
  • accurately record and document all weight sheets and charts
  • assist in inspecting and checking the smokehouse rooms for Standard Sanitary Operating Procedures (SSOP) deficiencies hourly
  • transport racks of product to and from the smokehouse floor
  • consume products into SAP
  • load and unload carts of raw product into the smokehouses
  • monitor each smokehouse every 30 minutes to 1 hour, monitor oven cycles and product through testing samples
  • follow proper ready to eat procedures
  • stage product in packaging and ham steak coolers
  • perform general housekeeping and assist with production as required
  • report detected inconsistencies to supervisors, quality assurance personnel, or managers
  • check for condensation before moving product
