The Senior Sushi Sous Chef role at Bon Appetit is an exciting leadership opportunity for a skilled culinary professional who is passionate about sushi and Asian cuisine. This role supports the Campus Executive Chef in managing sushi-focused culinary operations across multiple campus cafes. The successful candidate will play a vital role in the expansion of sushi offerings, ensuring exceptional quality, consistency, and aesthetic presentation. Daily responsibilities include overseeing sushi production, executing menu plans, enforcing food safety standards, and leading and mentoring kitchen teams. This position demands a hands-on approach, creative flair, and operational expertise to enhance guest experiences. The typical work schedule is from 8:00 am to 6:00 pm, with occasional flexibility needed for catering events in the evenings.

The Senior Sushi Sous Chef is accountable for supervising all aspects of sushi preparation and service, managing food costs and inventory, and collaborating on menu development with a focus on Asian-inspired items. The role requires knowledge of both traditional and contemporary sushi techniques, strong knife skills, and prior leadership experience in similar culinary environments. The position also supports catering functions, including high-profile events, ensuring every culinary element is executed with precision and professionalism. As part of Bon Appetit’s culinary team, the Senior Sushi Sous Chef will also aid in launching new culinary programs and maintaining rigorous food safety and sanitation standards.

Job Requirements

  • Education equivalent to A.O.S. degree in Culinary Arts or culinary certificate
  • Culinary leadership experience, especially in sushi or high volume kitchens
  • Proven sushi knife skills and knowledge of sushi techniques
  • Experience handling complex foodservice operations
  • Ability to manage food cost controls and inventory
  • Flexibility to work 8:00 am to 6:00 pm with occasional evening catering events
  • Commitment to food safety and sanitation standards

Job Qualifications

  • A.O.S. degree in Culinary Arts or culinary certificate with relevant experience
  • Progressive culinary and kitchen leadership experience, preferably in sushi focused or high volume environments
  • Strong sushi knife skills and knowledge of traditional and contemporary sushi techniques
  • Experience in complex foodservice operations
  • Catering experience preferred
  • Knowledge of food trends, quality standards, production, sanitation, and food cost controls
  • Proficiency in Microsoft Office, Outlook, and general computer systems
  • ServSafe certification preferred

Job Duties

  • Support the Campus Executive Chef with oversight of sushi and kitchen operations across campus cafes
  • Lead daily sushi preparation and execution, maintaining high standards for quality, freshness, and presentation
  • Assist with planning and developing sushi and Asian inspired menu offerings to support program growth
  • Supervise and mentor hourly culinary associates
  • Manage food cost controls, inventory, and ordering processes
  • Support sushi production for catering, including action stations and high level C suite events
  • Execute catering functions with precision, creativity, and professionalism
