Job Requirements

  • Education level of high school diploma or equivalent
  • Strong culinary leadership and management experience
  • Proven experience in high volume food service operations
  • Ability to work extended hours including nights, weekends, and holidays
  • Must be physically capable of lifting up to 50 pounds regularly and occasionally more
  • Proficiency in computer and office equipment usage
  • Ability to communicate clearly and effectively in English
  • Flexibility to work in fluctuating temperature environments
  • Experience in food safety and sanitation standards
  • Demonstrated ability in multitasking under pressure
  • Strong interpersonal and communication skills
  • Ability to lead and motivate large culinary teams
  • Commitment to safety, quality, and guest satisfaction
  • Ability to work independently and as part of a team

Job Qualifications

  • Degree or similar certification or experience in culinary arts strongly preferred
  • Five plus years of culinary leadership experience with two plus years in a sous chef capacity preferred
  • Previous experience in high volume, complex food service operations especially in sports or entertainment venues strongly preferred
  • Comprehensive knowledge of food and catering trends focusing on quality, production, sanitation, food cost controls and presentation
  • Proven experience leading large teams including managers, supervisors and part-time team members (50 plus preferred)
  • Experience opening food and beverage establishments and building culinary teams in large venues preferred
  • Ability to complete projects reliably and expediently with adherence to deadlines
  • Proficiency with computer software including MS Office
  • Experience with computerized workforce management and inventory/order management software preferred
  • Excellent verbal and written communication skills
  • Strong problem-solving and prioritization skills in fast-paced environment
  • Ability to work independently and collaboratively
  • Self-motivated with strong client/vendor relations and staff management skills
  • Superior internal and external customer service
  • Adaptability to work extended shifts and varying hours
  • Ability to work in fluctuating temperatures
  • English reading, writing, comprehension, math and computer skills
  • Ability to taste and evaluate food and beverage products
  • Physical ability to perform extensive standing, walking, lifting and bending
  • Effective communication skills for instructing and collaboration

Job Duties

  • Partner with Dickies Arena and Food and Beverage department leadership to ensure a successful arena opening and establishment of the F and B operation
  • Assist with the establishment and enforcement of Dickies Arena policies
  • Work closely with other team members and departments to ensure department procedures, task, and goals are met with effective communication and operational performance
  • Support concept development and operating plan establishment for all food and beverage areas focusing on culinary elements
  • Assist in driving menu and recipe development throughout the venue
  • Ensure exceptional and consistent food quality in presentation and production
  • Follow and enforce safe service policies of alcoholic beverages
  • Assist in hiring, training, staffing and scheduling culinary team members
  • Ensure culinary team members have necessary tools to perform jobs
  • Ensure consistent execution of menus and recipes, training, and accountability of culinary team
  • Engage with guests and team members to provide exceptional hospitality
  • Build and maintain strong relationships with venue staff, sponsors, clients, guests, and subcontractors
  • Enforce and maintain safety, security and sanitation standards
  • Obtain client and guest feedback to improve operations
  • Respond to and assist with culinary-related guest service issues
  • Conduct routine staff meetings
  • Support mentorship and development of culinary supervisors and team members
  • Conduct daily walkthroughs considering sanitation, safety, inventory
  • Use systems like purchasing, point-of-sale, workforce management
  • Ensure achievement of financial goals including labor and food cost
  • Oversee ordering and inventory management for culinary departments
  • Perform other responsibilities as assigned by leadership
