The position in focus is a specialized role centered on managing high-detail cleaning and preventive maintenance within commercial kitchen environments and other complex specialty areas. This role is particularly designed to ensure sanitation excellence, food safety compliance, regulatory readiness, and operational management of cleaning standards. The successful candidate will be responsible for overseeing deep-cleaning programs that cover critical infrastructure such as exhaust hood systems, grease traps, floor drains, walk-in coolers/freezers, ice machines, food-prep equipment, and delicate specialty décor including themed art pieces, figurines, sculptures, and other display elements. This comprehensive cleaning regimen supports the health and safety standards required in high-volume foodservice settings, ensuring all areas maintain the highest possible level of cleanliness.

Additionally, the role requires the development and continuous improvement of Sanitation Standard Operating Procedures (SSOPs), strong leadership in sanitation and food safety practices, and the ability to lead routine audits and corrective actions to uphold compliance with FDA Food Code and local health regulations. The role demands working knowledge of HACCP principles and chemical control management, along with training teams to prevent cross-contamination and maintain effective cleaning techniques.

The candidate will also serve as the primary point of contact during health inspections, maintaining critical documentation like temperature logs, cleaning logs, pest control reports, chemical inventory, and food safety certifications. They must orchestrate operational management to assure service delivery meets 'white-glove' expectations without compromising park or restaurant operations. Key responsibilities include budget management for chemicals, PPE, equipment, and contracted services, as well as supply and equipment inventory oversight.

Leadership and team training are vital components of this position. The candidate will be tasked with promoting a culture of accountability, coaching supervisors on sanitation compliance enforcement, and ensuring ongoing staff education on cleaning processes, safety protocols, route efficiencies, and equipment handling. This position offers a salary around $90,000 per year and involves working overnight shifts (approximately 11:00 PM to 5:00 AM) with some weekend requirements. Job Requirements

  • High school diploma or equivalent
  • Minimum 5 years of experience in commercial kitchen sanitation or related fields
  • Proven leadership ability in managing sanitation programs
  • In-depth knowledge of food safety regulations and sanitation standards
  • Ability to work overnight shifts including some weekends
  • Strong organizational and communication skills
  • Ability to train and manage cleaning teams effectively

Job Qualifications

  • 5 or more years of experience managing commercial kitchen operations or complex specialty cleaning programs
  • Demonstrated expertise in restaurant sanitation, deep cleaning, and high-detail work
  • Strong working knowledge of FDA Food Code and local health regulations
  • Experience using HACCP-based food-safety programs
  • Proven ability to lead teams in fast-paced, guest-centric environments
  • Commercial kitchen cleaning experience required
  • Customer service experience required

Job Duties

  • Manage and execute deep-cleaning programs for exhaust hood systems, grease traps, floor drains, walk-in coolers/freezers, ice machines, food-prep equipment and smallwares, perform direct specialty detail-cleaning of décor, themed art pieces, figurines, sculptures and display elements using non-abrasive preservation-safe methods
  • Plan and execute quarterly deep-clean cycles across approximately 122 areas
  • Establish master cleaning schedules based on risk and usage levels
  • Coordinate vendor partners where needed
  • Identify sanitation-related equipment issues and coordinate maintenance
  • Develop, implement, and improve Sanitation Standard Operating Procedures (SSOPs)
  • Ensure compliance with all applicable food safety regulations and local health codes
  • Lead and document routine sanitation audits and corrective action plans
  • Maintain chemical controls including dilution, storage, and SDS compliance
  • Train teams on sanitation, cleaning techniques, and cross-contamination prevention
  • Serve as primary point of contact for inspections
  • Maintain required documentation including temperature logs, cleaning logs, pest control reports, chemical inventory, and employee food-safety certifications
  • Conduct mock inspections to ensure continuous readiness
  • Oversee kitchen, restaurant, decorative, and high-visibility areas to ensure standards are never compromised
  • Maintain labor scheduling that supports cleaning timelines without impacting park operations
  • Manage budgets related to chemicals, PPE, equipment, and contracted services
  • Maintain supply and equipment inventory
  • Support consistent service delivery aligned with 'white-glove' expectations
  • Train staff on cleaning processes and procedures, ongoing training programs, route cards and workflow efficiencies, chemical and equipment safety
  • Coach supervisors on enforcing sanitation compliance
  • Promote a culture of accountability and continuous improvement
  • Ensure service excellence across all assigned responsibilities
