This position is for a Pastry Cook within White Lodging, typically employed in one of their luxury hotel food and beverage outlets. The role is integral to maintaining the high culinary standards the brand is known for, involving the preparation of breads, pastries, and various baked goods including Danish, croissants, and brioche rolls. As a Pastry Cook, you will be responsible for preparing doughs, fillings, proofing, baking, and decorating a variety of baked items, ensuring they meet recipe, quality, and presentation standards. You will follow detailed production sheets to manage daily baked goods output, coordinate with kitchen leadership to plan specials and manage excess food, and maintain meticulous kitchen logs to comply with food safety programs. Safety and sanitation are paramount, and you will adhere strictly to food safety handling policies including personal hygiene and temperature checks.

The Pastry Cook will collaborate daily with Pastry Supervisors, Chefs, and restaurant managers to ensure excellent guest service through timely and consistent production of baked items, proper station setup, and efficient execution of side work and closing duties. The role requires a keen eye for detail to check food quality, presentation, and portion size, and to ensure all items meet the company’s stringent quality assurance standards. Waste control and food cost management are also key responsibilities.

Compliance with local, city, county, and state health codes and the company's food quality and safety standards is mandatory. In addition to technical baking skills, the role demands strong organizational skills, creativity, and the ability to work under pressure in a fast-paced environment. Personal appearance and professional conduct are essential, reflecting the brand’s high standards. You will also participate in daily pre-shift meetings, adhere to attendance policies, practice energy conservation, and maintain security and confidentiality as part of the company culture.

The position also requires a physical ability to perform tasks such as lifting up to 50 pounds, standing and walking for extended periods, and handling delicate pastry work requiring fine motor skills. The ideal candidate possesses a culinary arts degree or certificate and at least two years of pastry cook experience within luxury hotels or high-end restaurants. Job Qualifications

  • Culinary arts degree or certificate preferred
  • At least 2 years pastry cook experience in luxury hotel or freestanding restaurant preferred
  • Ability to read and write follow recipes and use records
  • Manual dexterity for small delicate pastry designs
  • Ability to prioritize work to complete tasks within shift
  • Ability to maintain positive working relationships and support teamwork
  • Knowledge of food safety and sanitation standards

Job Duties

  • Prepare breads and pastries including doughs and fillings proofing baking and decorating
  • Review production sheet to understand daily baked goods variety
  • Prepare and cook food according to recipes quality and presentation standards and food prep checklists
  • Maintain kitchen logs for food safety program compliance
  • Communicate excess food items to Chef for daily specials planning
  • Safely use baking and measuring tools equipment and appliances
  • Follow and ensure compliance with food safety handling policies and personal hygiene procedures
  • Check and ensure correct temperatures of kitchen appliances and food and report issues
  • Monitor quality of food and portions served throughout shift
  • Report to Pastry Supervisor or Chef
