Job Requirements
- Bachelor's degree or related culinary degree
- minimum 10 years of industry and culinary management experience
- ability to manage diverse teams
- strong leadership and organizational skills
- knowledge of safety and sanitation procedures including HACCP
- experience in culinary training and staff development
- proficiency in menu development and cost control
- ability to travel as needed within district, region, and nationally
- excellent communication and interpersonal skills
- capability to work within a matrix organizational structure
- willingness to support performance management and talent development processes
Job Qualifications
- AOS or BS in Culinary Arts or equivalent experience
- minimum 10 years of industry and culinary management experience
- ability to manage in a diverse environment with focus on client and customer service
- knowledge and previous experience with safety and food safety
- ability to control cost food and labor
- experience in demonstration cooking
- menu writing and development ability
- computer literacy including word processing and presentation software
- personnel development and culinary leadership experience
- multi-unit P/L accountability or contract-managed service experience desirable
- experience working in a union environment desirable
Job Duties
- Support P/L oversight including food costs labor costs
- support Sports and Entertainment menu innovation initiatives
- menu development implementation and review
- maintain quality and consistency standards based on Aramark standards
- oversee senior executive chef and culinary bench strength development
- support designated regional VIP or special events
- support value optimization and compliance initiatives
- maintain presentation standards as determined by Aramark standards
- conduct culinary audits and provide follow up plans
- support development and implementation of culinary programs
- support marketing initiatives and new menu promotions
- review menu mix with regional and district management
- review food cost labor cost top line growth and NVD program
- implement district kitchen product safety parameters such as HACCP
- implement culinary skills training programs
- assess executive chefs and highlight candidates for advancement
- participate in regional marketing and field presentations
- recruit and develop staff working with component and human resource teams
- support performance management and talent development
- mentor district Pro Chef nominees
- partner with district and regional leaders for product and vendor compliance
