The Senior Cook position at Houston Methodist Baytown Hospital plays a critical role within the Food and Nutrition Services Department by preparing and cooking a variety of entrees, side dishes, and specialty items. This role requires the use of a recipe collection to maintain consistency, quality, and safety. Beyond the standard food preparation duties, the Senior Cook is also responsible for preparing specialty dishes for high-profile catered events such as physician dinners, employee recognition ceremonies, and other important hospital functions. This requires a thorough understanding of upscale plated menu items, buffet receptions, large volume batch cooking, and fundamental cooking techniques like braising and searing.

This non-exempt position demands strict adherence to Houston Methodist Food and Nutrition Services Standards of Appearance and compliance with local food safety ordinances. The Senior Cook ensures all production and cooling records are accurately reviewed and maintained to meet Hazard Analysis Critical Control Point (HACCP) guidelines. The position supports multiple service areas including patient meals, café service, catering functions, and the doctor's lounge, ensuring that food quality and presentation meet the highest standards. In addition, the Senior Cook may provide assistance in other food and nutrition service areas as necessary, showcasing flexibility and teamwork.

The role requires strong communication skills to effectively interact with patients, physicians, family members, and co-workers while maintaining a customer service focus. The Senior Cook practices sound judgment in managing kitchen operations and adapts to a dynamic work environment. Candidates for the Senior Cook position should have a minimum of two years of food service or volume cooking experience in healthcare or hotel settings. Preferred qualifications include a high school diploma or equivalent and certification such as the Food Handlers Permit approved by the Texas Department of State Health Services or the American National Standards Institute. Additional preferred certification includes ServSafe. The Senior Cook must demonstrate competency in kitchen equipment use, sanitation, and food safety protocols to ensure compliance with federal, state, and local regulations.

Job Requirements

Job Duties

  • Prepare and cook entrees, side dishes, and specialty products using provided recipes
  • Prepare specialty dishes for catered events such as physician dinners and employee recognition ceremonies
  • Maintain adequate production levels to support patient meals, café, catering functions, and doctor’s lounge
  • Review and maintain production records and cooling charts according to HACCP guidelines
  • Adhere to Houston Methodist Food and Nutrition Services Standards of Appearance and local food safety ordinances
  • Assist in other food and nutrition service areas as needed
  • Participate in daily production meetings prioritizing patient satisfaction and customer service
