Job Requirements
- Elementary school graduation plus three years of cooking experience or equivalent education/experience
- ability to work full-time
- willing to obtain NYC Food Handler’s Certificate within 30 days if not already certified
- ability to supervise kitchen staff and manage daily kitchen operations
- compliance with all food safety and sanitation regulations
- capable of maintaining professional conduct and enforcing staff policies
- ability to complete required documentation and reports on meal preparation and serving
- residency in NYC within 90 days or eligibility to reside in nearby counties after two years of city employment
- no child maltreatment history as required by law
Job Qualifications
- High school diploma or GED
- five or more years’ cooking experience in a restaurant or institutional setting
- two or more years’ experience supervising food service or kitchen staff
- ability to work well under pressure
- excellent written and oral communication skills
- ability to maintain professional relationships with clients, co-workers, and facility staff
- capable of conducting and assessing inventory
- experience delegating tasks to maintain fast service
- ability to read and follow standardized recipes
- strong knowledge of proper food handling procedures
- NYC Food Handler’s Certificate or ability to obtain it within 30 days of employment
Job Duties
- Supervise and train cooks and institutional aides in meal preparation and kitchen activities
- ensure all necessary food items are ready before meals
- prepare and serve food in compliance with New York City Food Standards, OCFS regulations, and New York State Child Nutrition requirements
- have meals ready at scheduled times including breakfast for residents with early appointments and court lunch pickups
- ensure adequate amounts of food are prepared considering census and expected shortages
- prepare special or therapeutic diets per nutritionist or medical instructions
- rigidly enforce sanitary codes for meal preparation and food handling
- monitor and document food temperature safety
- check kitchen equipment daily for safe operation and take corrective actions
- complete food production worksheets and required paperwork
- ensure meal count documentation and related reports are completed
- inform staff of procedural, safety, security, and sanitation guideline changes
- enforce staff policies on time, leave, conduct, and absence control
- evaluate performance of assigned staff
