Job Requirements
- High school diploma or GED
- Two or more years of similar work experience in production cooking
- Knowledge of cooking principles and menu substitutions for special diets
- Skills in hot food production and commercial kitchen equipment use
- Ability to learn and follow policies and procedures
- Ability to read and understand written and verbal instructions
- Effective communication skills
- Basic math skills for calculating recipe weights and food amounts
- Ability to learn and pass food handling certification
- Ability to perform tasks within limited time frames and use chemicals safely

Job Duties
- Prepares all food items according to standardized recipes
- Adjusts recipe quantities for correct yields
- Notifies supervisor of any problems relating to production
- Plans food production timing and quantities in accordance with daily orders and menu tallies
- Determines menu substitutions when shortages occur consulting with dieticians
- Minimizes food waste through appropriate planning and tracking
- Checks and logs food and equipment temperatures reporting any abnormalities
- Maintains par levels of food and supplies, restocks and rotates inventory
- Keeps assigned work areas clean and orderly
- Reports needed equipment repairs
- Receives and checks deliveries from vendors
- Provides leadership and knowledge in cooking and food preparation to kitchen staff
- Deals with external customers in café or catering assignments
- Works under general supervision
