Job Requirements

  • High school diploma or GED
  • Two or more years of similar work experience in production cooking
  • Knowledge of cooking principles and menu substitutions for special diets
  • Skills in hot food production and commercial kitchen equipment use
  • Ability to learn and follow policies and procedures
  • Ability to read and understand written and verbal instructions
  • Effective communication skills
  • Basic math skills for calculating recipe weights and food amounts
  • Ability to learn and pass food handling certification
  • Ability to perform tasks within limited time frames and use chemicals safely

Job Qualifications

  • Ability to perform tasks within limited time frames

Job Duties

  • Prepares all food items according to standardized recipes
  • Adjusts recipe quantities for correct yields
  • Notifies supervisor of any problems relating to production
  • Plans food production timing and quantities in accordance with daily orders and menu tallies
  • Determines menu substitutions when shortages occur consulting with dieticians
  • Minimizes food waste through appropriate planning and tracking
  • Checks and logs food and equipment temperatures reporting any abnormalities
  • Maintains par levels of food and supplies, restocks and rotates inventory
  • Keeps assigned work areas clean and orderly
  • Reports needed equipment repairs
  • Receives and checks deliveries from vendors
  • Provides leadership and knowledge in cooking and food preparation to kitchen staff
  • Deals with external customers in café or catering assignments
  • Works under general supervision
