The position of Second Cook within Brown University's Dining Services is a full-time, onsite role with a commitment of 40 hours per week throughout the year. This position operates under the Dining Services Union rates and requires participation across various dining venues and catered events on campus. The Second Cook is a vital member of the food production team responsible for preparing daily menu items as well as supporting catered functions. Working with minimal supervision, this employee undertakes advanced cooking responsibilities beyond those of subordinate Cook positions and helps maintain smooth kitchen operations by anticipating production needs, ensuring timely completion of orders, and managing production subsystems.

This role demands a thorough understanding of culinary techniques, including baking and dessert preparation, while upholding the highest standards of quality, sanitation, and safety. The Second Cook also assumes leadership duties by guiding and training junior production staff to ensure efficient workflow and adherence to operational protocols. Physically, the role requires standing for extended periods, handling kitchen equipment safely, and accommodating various environmental conditions. Compliance with safety policies such as use of personal protective equipment and cut-resistant gloves is mandatory.

Job Duties

  • Performs tasks and responsibilities described in cook position description at a higher level and with minimal supervision
  • anticipates needs and assures availability of raw products for daily and future production as assigned
  • assures production is timely and completed as close to service as possible
  • possesses a developed sense of the overall production scheduling of the unit task status and service requirements and assists others as needed
  • improves skills by learning and practicing the skills and responsibilities of a First Cook
  • guides and trains lower classification employees in task accomplishment
  • assumes responsibility of production subsystems including catering
  • assists in basic dessert preparation
  • maintains a neat well-groomed professional appearance
  • performs other tasks as requested
