Job Requirements
- High school diploma or equivalent
- 2-3 years of culinary experience in a high-volume casual dining environment
- Proficient knife skills and knowledge of cooking techniques
- Knowledge of HACCP food safety standards
- Ability to operate kitchen equipment safely
- Strong communication and customer service skills
- Ability to lift and move up to 40 lbs
- Ability to stand, bend, and twist for extended periods
- Comfortable working in hot environments and with water and chemical solutions
- Ability to multitask and perform under time constraints
- Ability to adapt to changing menus and procedures
Job Qualifications
- 2-3 years of closely related culinary experience in a high-volume casual dining restaurant or similar environment
- Intermediate level of food knowledge related to soups, sauces, and pantry
- Proficient knife cutting skills
- Full knowledge of dry and moist cooking principles
- Knowledge of HACCP standards
- Working knowledge of kitchen equipment including grill, fryer, slicers, and ovens
- Proficient in handling organic and specialty ingredients and quality control
- Adaptable to new menu items and cooking techniques
- Ability to work in a fast-paced environment
- Ability to multitask under time constraints
- Working knowledge of weights, measures, and cooking techniques
- Good communication and customer service skills
- Ability to speak, read, and comprehend instructions, correspondence, and policy documents
- Familiarity with restaurant control systems such as prep charts, pull charts, and recipe conversions
- Maintain professional appearance and demeanor
Job Duties
- Follow recipes and product directions for preparing, seasoning, cooking, tasting, carving, and serving food items including soups, meats, vegetables, desserts, and other food products
- Taste products, follow menus, estimate food requirements, check production, and keep records to plan production and requisition supplies and equipment as needed
- Operate a variety of kitchen equipment, measure and mix ingredients, wash, peel, cut, and shred fruits and vegetables
- Handle organic and specialty ingredients
- Maintain quality control including monitoring freshness of products daily
- Acquire intermediate knowledge of ingredient specifications and seasonal variability
- Coordinate food output with other cooks
- Clean and sanitize workstations and equipment
- Practice excellent food safety and sanitation practices complying with HACCP standards
- Stock, date, rotate, and check temperature of products
- Understand the menu, ingredients, and nutritional content and communicate clearly to customers
- Receive, stock, move, and lift food and beverage products and supplies
- Comply with company and franchise policies and applicable regulatory agencies including Airport Authority rules
