Job Requirements
- Graduation from high school or equivalent
- six months of work experience as an apprentice or helper in a kitchen acquiring basic baking skills
- one year of specialized experience performing quantity baking in a relevant setting such as restaurant, hotel, hospital, school, or institution
- ability to perform hands-on production of a variety of baked goods from scratch and in large quantities
- knowledge of baking ingredients, food safety, and sanitation
- capability to adjust recipes and calculate quantities for production needs
- ability to supervise and instruct cafeteria helpers
- comply with USDA annual minimum training hours
- availability for full-time, permanent employment in Kaneohe, HI
- meet all application requirements as stated by the Hawaii State Department of Education
Job Qualifications
- Graduation from high school or equivalent
- one year of work experience as a baker in a restaurant, hotel, hospital, school, or institution producing a variety of baked goods from scratch and large quantities
- proficiency in quantity baking including knowledge of ingredient properties, functions, and substitutions
- experience adjusting standardized recipes, calculating bread equivalents, determining baking times for non-standard batch sizes
- knowledge of care and safe handling of utensils, tools, and equipment used in baking
- knowledge of food and kitchen safety and sanitation practices
- ability to supervise helpers and assist in training new food service employees
Job Duties
- Coordinates and works closely with other food service employees to ensure baked goods are prepared in a timely manner
- reviews daily production records, determines appropriate standardized recipes, and secures necessary ingredients and equipment
- accurately weighs, measures, and mixes ingredients in accordance with approved standardized recipes
- prepares mixes for and bakes bread, rolls, buns, biscuits, muffins, pizza crusts, wiener in a blanket, and other baked goods
- sets-up serving counters for meal service, serves students and staff, and replenishes food as needed
- portions and/or directs the portioning/packing of menu items for satellite meals
- cleans and maintains work areas, serving counters, and dining areas in a neat, clean, sanitary, and orderly manner
- properly labels, stores, and/or disposes leftover foods
- receives provisions ordered, documents product temperature, and reports discrepancies
- directs/instructs cafeteria helpers and/or other adult/student helpers
- attends and participates in staff meetings, workshops, and in-service training
