This role is especially suited to cooks who have experience or interest in handling exotic proteins such as venison, bison, and duck, as well as those keen to develop their expertise in classical sauce production from scratch, including stocks, reductions, and emulsifications.

Job Qualifications
- Previous line experience in a full-service or fine dining environment preferred
- Strong knife skills and proficiency across multiple cooking methods required
- Experience with or eagerness to learn exotic protein fabrication and classical sauce work highly valued
- Ability to perform with precision and composure in a high-volume, high-expectation kitchen

Job Duties
- Prepare and execute dishes according to established recipes and menus with consistency and precision
- Work the line with confidence, utilizing a range of techniques across grill, sauté, and oven stations
- Prepare and handle exotic proteins including venison, bison, duck and other specialty ingredients with care and skill
- Produce traditional sauces from scratch - stocks, reductions, emulsifications, and more - as a foundational part of daily mise en place
- Collaborate with kitchen leadership to maintain an efficient and professional workflow during service
- Uphold the highest standards of food safety, sanitation, and kitchen organization at all times
- Assist with private dining and event execution, including large-format plating and banquet-style service
- Participate in menu development and contribute creative ideas as part of a collaborative culinary team
- Monitor ingredient inventory and communicate shortages to management proactively
