Job Requirements
- Minimum six months experience as a line cook at a 4 or 5 star hotel or restaurant
- ability to perform job functions with attention to detail, speed and accuracy
- ability to prioritize, organize and follow through
- ability to work well under pressure of meeting production schedules
- ability to lift up to 50 pounds
- ability to work an 8-12 hour shift in hot and noisy conditions
- ability to speak, read and write English
- culinary certification preferred

Job Duties
- Maintain complete knowledge of and comply with all departmental policies, service procedures and standards
- ensure that standards are maintained at a superior level daily
- maintain and strictly abide by state sanitation/health regulations and hotel requirements
- maintain complete knowledge of correct maintenance and use of equipment
- meet with Kitchen Supervisor to review assignments and business levels
- complete opening duties including setting up work station, inspecting cleanliness and equipment, and establishing priority items
- select, clean and prepare meat, seafood, and vegetables
- prepare and produce saute, grill and sauce menu items for designated outlets
- prepare all dishes following recipes and yield guides
- inform Kitchen Supervisor of shortages or excess items
- maintain proper storage procedures
- minimize waste and attain forecasted food cost
- disinfect and sanitize work areas
- breakdown work station and complete closing duties
- exhibit a friendly, helpful, and courteous manner when dealing with guests and employees
