The cook is responsible for preparing, cooking, and presenting all foods listed on menu offerings including grilling, frying, broiling, baking, boiling, braising, and poaching. Job Requirements
- Must be at least 21 years of age
- culinary or associate's degree or equivalent from two-year college or technical school or equivalent combination of education and experience
- three years related experience and/or training
- knowledge of applicable food preparation methods and measures for assigned function
- ability to earn and maintain a current Food Handlers Card
- must be able to acquire and maintain appropriate gaming license
- ability to read and interpret documents in English such as safety rules, operating and maintenance instructions, and procedure manuals
- ability to add, subtract, multiply, and divide into all units of measure using whole numbers, common fractions, and decimals
- ability to operate an adding machine and have basic computer skills
- ability to apply commonsense understanding to carry out instructions furnished in written, oral, or diagram form
- must meet department uniform, appearance, and grooming requirements including purchasing and wearing slip-resistant safety shoes

Job Duties
- Provide friendly, fast, and helpful customer service to all guests and team members
- create an atmosphere that encourages guests to choose Jamul Casino for gaming entertainment and act as a mentor to team members to provide superior guest service
- properly prepare all foods listed on the menus including grilling, frying, broiling, baking, boiling, braising, and poaching
- ensure all plates or pans served are aesthetically appealing and cooked to customer and Room Chef specifications
- follow recipes to prepare and cook food to meet departmental standards
- measure, convert, and make recipe substitutions without affecting quality
- work closely with Room Chef to monitor culinary standards and operational guidelines including kitchen areas and food preparation activities
- administer all food preparation aspects ensuring kitchen cleanliness, stock levels, and problem resolution
- prepare all food items efficiently according to established recipes and plating procedures
- have complete knowledge of kitchen equipment operation and safety
- be proficient in making soups, sauces, starches, thickeners, and emulsifiers
- perform various culinary tasks such as broiler, sauté, Asian, and prep stations as needed
- be proficient in butchery of meats and seafood
- adhere strictly to regulatory, department, and company policies
- write prep lists and take inventory
- collaborate with culinary leadership to ensure coordinated workflow to meet business demands and customer satisfaction
- demonstrate excellent knife skills, including classic cuts and sharpening
- assist in operation of other food and beverage venues as needed
- attend all departmental and company training programs or meetings as directed
