As a Rock and Brews Utility Steward, you will play a crucial role in maintaining a safe, hygienic, and fully operational kitchen environment. You will be responsible for ensuring all kitchenware is clean, sanitized, and ready for use during service hours. The role requires flexibility to work various shifts, including late nights, early mornings, weekends, and holidays, making it suitable for individuals with adaptable schedules. The position involves working closely with other kitchen and service team members to ensure the environment adheres to strict sanitation and food safety standards. Tasks will include operating and maintaining dishwashing machines, distributing clean utensils and dishware, managing waste disposal, and upholding cleanliness of the entire kitchen area. Attention to detail is critical, as you will be responsible for inspecting items for cleanliness and maintaining logs related to temperature and breakage to uphold operational standards.

The work environment can be physically demanding and requires the ability to stand, walk, bend, lift, and move items regularly. You will be working in varied temperature conditions ranging from hot kitchen areas to cold storage and preparation spaces. Noise levels can be moderate to loud, especially when working near kitchen equipment or on the casino floor, which includes exposure to moving parts and chemical cleaning agents. This role also mandates the use of personal protective equipment (PPE) to ensure safety.

Job Requirements

  • A high school diploma or equivalent
  • Six months of related experience preferred
  • Ability to achieve ServSafe certification within 90 days
  • Ability to maintain discretion in handling confidential information
  • Ability to interact with guests and team members professionally
  • Ability to work irregular hours and extended shifts including late nights, early mornings, weekends, and holidays
  • Physical ability to stand, walk, climb, balance, stoop, kneel, crouch, and move freely for prolonged periods
  • Ability to lift, carry, push, pull, or move objects up to 20 pounds regularly and up to 60 pounds occasionally with assistance
  • Must wear required personal protective equipment (PPE) while performing duties
  • Specific vision abilities including close vision, distance vision, peripheral vision, depth perception, and ability to adjust focus

Job Duties

  • Load dirty dishes, glassware, and utensils into racks and dishwashing machines
  • Inspect all items for cleanliness after washing and rewash as needed
  • Operate and maintain dishwashing machines to include cleaning and draining of machines
  • Distribute clean dishware and utensils to assigned venue(s)
  • Remove, sort, and dispose of trash as assigned according to established guidelines
  • Maintain clean, safe, and organized work areas including floors, walls, and counters
  • Ensure a high level of sanitation is in place at all times and all team members follow sanitation procedures and food guidelines
  • Assist in the maintenance of temperature and breakage logs
  • Perform job duties in full compliance with departmental internal controls, policies, procedures, and regulations
  • Perform other duties as assigned
