Job Requirements
- ability to bend, stoop, stand, lift 50 pounds and push carts weighing up to 200 pounds
- ability to work flexible schedule including weekends and holidays
- compliance with hotel uniform and grooming standards
- follow new hire training and ongoing competency programs
- execute emergency procedures as per hotel standards
Job Qualifications
- excellent culinary skills and knowledge of food production techniques
- thorough knowledge of food service sanitation standards
- thorough understanding of kitchen equipment use and operation
- outstanding management, organizational, communication and leadership skills
- ability to speak, read and write English
- knowledge of current market trends and techniques preferred
- college degree preferred
- five to six years experience in quality food production in upscale hotel or restaurant
- three plus years supervisory experience in quantity food production in upscale hotel or restaurant
- ACF certification as Restaurant Chef or culinary degree from recognized institute and equivalent experience
Job Duties
- coordinate and oversee activities of all food production team members in menu preparation
- ensure all food products meet high quality and are served timely
- manage kitchen food ordering, production, holding and storage
- select, train and schedule kitchen team members
- contribute information and analysis to culinary strategic plans and reviews
- develop new menu concepts, test and cost out new items
- maintain updated recipes and dish costing
- oversee food preparation methods, portion sizes, and timeliness
- control food usage to minimize waste
- inspect quality and quantity of food items
- ensure culinary execution aligns with brand standards
- approve all food items prepared to ensure attractiveness and taste
- evaluate employee performance and establish training needs
- interview, select, appraise and discipline kitchen staff
- maintain cleanliness and equipment condition
- follow emergency and safety procedures
- comply with hotel policies and standards
