Job Requirements
- Certified Executive Chef, Bachelor's degree in culinary arts, Certified Dietary Manager, or equivalent combination of education and experience
- Registered Dietitian Nutritionist required
- Minimum of 5 years related experience including managerial or supervisory experience in long term care and/or skilled nursing industry
- Strong knowledge of dietary practices and procedures
- Understanding of laws, regulations and guidelines governing dietary functions in nursing care facilities
Job Qualifications
- Certified Executive Chef, Bachelor's Degree in Culinary Arts, Certified Dietary Manager, or equivalent combination of education and experience
- Registered Dietitian Nutritionist required
- 5+ years of related experience, including managerial/supervisory experience, in the long term care and/or skilled nursing industry
- Demonstrated knowledge and skills necessary to provide culinary services appropriate to the age-related needs of the residents
- Knowledge of dietary practices and procedures as well as laws, regulations and guidelines governing dietary functions in nursing care facilities
Job Duties
- Conduct sanitation rounds and prepare reports on observations, findings, and corrective action plans
- Conduct dining room and in-room meal service observations and prepare detailed reports on findings, including conducting guest/resident interviews
- Review departmental procedures such as kitchen rounds, labeling and dating, pre/post meal huddle, hand washing, cleaning and sanitizing of dish wares, cleaning schedule, monthly meal counts, menu item usage reports, cooling, refrigerator/freezer and food temperature logs
- Assist with and lead survey preparedness initiatives, including participating in the facility surveys made by authorized government agencies, as directed
- Review emergency/disaster plans and provide feedback on any areas for improvement
- Conduct in-service education on culinary service topics
- Conduct a review of the Bistro operation, including sales, menu, daily specials, and cleanliness
- Assist with culinary service department budgets, as assigned
- Attend food committee meetings
- Review and provide recommendations for building quality improvement programs
- Assist with the development and implementation of corporate policies and procedures governing the culinary service operation
- Fill in for open positions, including Executive Chef, Dietary Manager, Bistro Manager, and Cook, as required
- Travel to assigned facilities, as assigned
