The role of the Cook at Razzoo's Cajun Cafe is pivotal in fulfilling food order tickets by preparing, seasoning, and cooking a diverse range of complex menu items such as soups, sauces, vegetables, meats, and desserts. Working under the direction of the Manager on Duty, the Cook is essential to the kitchen operation, ensuring that every dish is prepared according to company recipes while adhering strictly to food safety and sanitation guidelines. The position requires urgency, attention to detail, and commitment to freshness, adhering to a cook-to-order philosophy that avoids pre-cooking food items to maintain quality and customer satisfaction.

The Cook ensures that the kitchen remains organized and hygienic following strict sanitation protocols, including safe knife handling, proper thawing and storage of food items, and regular cleaning of the workstation.

Job Requirements

Job Qualifications
- Food Safety Handling Certification
- knowledge and appropriate use of kitchen equipment
- must be of legal age to operate certain equipment in compliance with federal, state or local laws
- successful completion of Razzoo's training for this position
- kitchen experience preferred but not required
Job Duties
- Fulfill food order tickets by preparing, seasoning and cooking complex menu items including soups, sauces, vegetables, meats and desserts
- take direction from Manager on Duty
- comply with all applicable federal, state and local statutes as well as Razzoo's policies and procedures
- always follow recipes as they are presented and have recipes out when making them
- follow line procedures never taking shortcuts to shorten procedure
- utilize scales and measuring tools when portioning food and completing recipes
- have the urgency to prepare food items to achieve Razzoo's stated cook times
- attack food tickets at all times of day with a sense of urgency
- commit to preparing plates in consistent arrangement with clean rims and proper garnish
- follow cook to order philosophy avoiding pre-cooking food items
- follow proper food thawing procedures
- properly cover, label, date and rotate all food items
- properly ice down food items as required
- manually and safely clean knives
- adhere to all safety, sanitation and food-handling rules and guidelines
- maintain a clean and organized kitchen
- handle all food items while maintaining a sanitized kitchen
- follow proper knife handling procedures using cutting gloves
- utilize rubber gloves when handling food or trash
- follow prep sheets completed by managers
- manage line food levels appropriate to the level of business
- clean and sanitize station and check in with manager before leaving
- commit to a safe working environment reporting unsafe procedures or conditions
- utilize chemicals as described in OSHA MSDS book
- handle kitchen equipment safely
- operate dishwashing machine and maintain chemical levels
- empty trash cans using safety and sanitation measures
- wash and sanitize hands appropriately
- perform additional responsibilities as requested by manager at any time
