Job Requirements
- Diploma from certified culinary academy preferred
- Minimum of 5 years culinary management experience in a similar role
- Must be able to obtain and maintain any required licensing or work cards including Food Manager Certification
- Ability to communicate professionally
- Ability to perform high quality work with attention to detail, creativity, speed, and accuracy
- Ability to work well under pressure and resolve problems calmly using good judgement
- Basic computer skills and knowledge of Microsoft Office
- Must demonstrate leadership and team collaboration abilities
- Must maintain punctuality and reliability
- Knowledge of union environment preferred
- Ability to prioritize, organize and meet deadlines
- Must participate in meetings and training programs.
Job Qualifications

Job Duties
- Act with integrity, honesty and knowledge that promote the culture, values of Westgate Resorts
- Ensure that all guests feel welcome and are given responsive, professional, gracious service at all times
- Maintain clean and organized work stations consistent with the restaurant's philosophy and standards of excellence
- Recognize or seek areas for staff and restaurant improvement and offer positive solutions for change
- Operate daily with efficiency, respect, friendliness, professionalism, teamwork, knowledge, patience, awareness, compassion, courtesy and initiative
- Understand all programs, procedures, standards, specifications, guidelines and training programs
- Represent the restaurant professionally through effective communication, cooperation and relationships with all business partners
- Assume 100% responsibility for the quality and integrity of products served
- Ensure all products are received in correct unit, count and condition in accordance with receiving policies
- Collaborate with staff to ensure timely completion of mise-en-place production
- Perform production work including butchering, charcuterie, braises, stocks and marinades
- Consolidate and maintain order, rotation and cleanliness of the walk-in cooler
- Assist cooks with station set up and break down for shift changes
- Assist in management of kitchen staff including prep and dishwashers
- Participate in ordering, menu and recipe development
- Document new kitchen recipes in standard corporate format
- Work as a team member to ensure success in all stations
- Fill in where needed to meet service standards and efficient operations
- Maintain a hygienic and safe working environment
- Attend all meetings and participate with opinions or ideas
- Maintain equipment according to safety and maintenance programs
- Responsible for end of month inventory
- Work lunch and/or dinner service while supervising daily production needs
- Obtain and maintain required licensing such as Food Manager Certification
- Communicate professionally
- Perform high-quality work with attention to detail, creativity, speed and accuracy
- Work well under pressure, remain calm and resolve problems with good judgement
- Prioritize, organize and follow through to meet deadlines and production schedules
- Demonstrate creative and artistic approaches to plate presentations

- Maintain knowledge of union environment if applicable
- Possess basic computer skills and knowledge in Microsoft Office.
