Job Requirements

  • Minimum 3+ years of sous chef experience and 5+ years of kitchen experience
  • culinary degree preferred
  • extensive knowledge of culinary fundamentals including knife skills, butchery and sauces
  • quick service restaurant experience highly desired
  • knowledge of food industry, restaurants and competitive markets
  • developed communication skills both verbal and written
  • ability to work independently and as a team leader
  • ability to maintain compliance with all local, state and federal laws and regulations
  • ability to supervise train and motivate multiple levels of employees
  • ability to assess employee performance fairly and consistently
  • basic knowledge of revenue management
  • participation in development of financial and operational goals
  • some administrative duties
  • must be able to stand and exert mobility for up to 8 hours
  • frequent exposure to heat, steam, refrigeration and cleaning chemicals
  • ability to lift 30-50 lbs regularly
  • occasional pushing or pulling carts/equipment up to 250 lbs
  • ability to perform repetitive motions including grasping, writing, standing and walking
  • slip-resistant footwear required

Job Qualifications

Job Duties

  • Work with the Head Chef to create innovative and authentic menus
  • educate self and communicate to team on regional history, culture and cuisine
  • develop, coach and consistently execute culinary standards
  • ensure consistent menu execution by using tools such as line checks, menu change SOP’s and recipes
  • impact service by being on the line during peak times, press events, and festival periods
  • educate and coach team to exceed expectations
  • develop a team of leaders prepared to move upward
  • clearly define expectations and hold individuals accountable
  • provide both positive and constructive feedback
  • delegate fairly to motivate team
  • actively recruit and hire top tier talent
  • communicate Jose Andres Group’s vision to team, guests, and community
  • demonstrate ownership, accountability, and initiative
  • create a positive work environment by addressing negative behaviors
  • practice policies and procedures
  • maintain a safe, clean, organized and sanitary work environment
  • enforce Food Sanitation and Safety standards
  • ensure health standards and laws are met
  • manage inventory, waste, pricing to meet cost targets
  • manage labor, scheduling and payroll
  • utilize tools such as Compeat correctly
  • coordinate with finance, marketing and events to meet standards
