Job Requirements

High school diploma or equivalent certification
one year food production experience preferred in commercial, military, or institutional settings
experience in corrections/detainee management and prior correctional food service training preferred
ability to communicate verbally and in writing to maintain records, files and prepare simple reports
must be a United States citizen

Job Duties

Perform food and beverage cooking and preparatory work including washing, peeling, cutting vegetables and fruits
prepare simple salads and slice cakes and pies
make coffee, tea, and other beverages
ensure correct recipes are extended to the facility population
serve portions of food on trays or plates and pour beverages
perform cleaning work including scraping, washing, sorting dishes, cleaning kitchen equipment, pots, pans, counters, and tables, sweeping and mopping floors
assist management in inventory counts and placement of food and supply orders
receive deliveries and take inventory
prepare various documentation related to food service operation including inventory pull sheets, production/service documentation, sanitation records, and meal delivery records
assist in conducting orientation and training for staff and detainee workers
monitor and direct detainee workers in tray preparation, cleanup, sanitation, and other food service related duties
perform other duties as assigned
