The Prep Cook role at Atlas Restaurant Group is an essential position within the culinary team, responsible for preparing ingredients and basic food tasks that ensure smooth kitchen operations. This position involves preparing meats, fish, vegetables, and other ingredients by cleaning, chopping, slicing, and measuring to assist chefs and cooks during food preparation. The Prep Cook may also apply basic cooking skills to help on cooking stations such as grill, fryer, garde de mange, oven, sauté, or pastry station, contributing to creating simple dishes and maintaining a clean and organized kitchen environment.

The Prep Cook will also prepare nightly station prep lists, ensuring that their assigned section is stocked and ready for service according to chef-created prep lists. Atlas Restaurant Group offers competitive hourly wages depending on location, with salary ranges that include $15.00 - $23.00 per hour in Maryland, $13.25 - $18.00 in Delaware, $16.00 - $18.00 in Florida, and $15.00 - $19.00 in Texas. Full-time employees working 30 or more hours per week are eligible for a robust benefits package that includes health, dental, and vision insurance, 401k contribution, life and AD&D insurance fully paid by the company, learning and development programs, mobility and advancement opportunities, pet insurance, and employee discounts. Part-time employees similarly have access to many of these benefits excluding health, dental, and vision insurance.

Job Requirements

  • High school diploma or equivalent
  • 1 years of related cooking experience
  • Must have a valid form of identification
  • Maintains local health department food handler's certification up to date and current
  • Ability to work efficiently under pressure in a fast-paced environment
  • Strong organizational skills with the ability to multitask
  • Basic understanding of cleanliness and sanitation standards
  • Excellent customer service skills with a polite and attentive demeanor
  • Flexibility to work varied shifts, including nights, weekends, and holidays
  • Must be able to learn and utilize Toast Point-of-Sale (POS) & Restaurant365 systems
  • Basic knowledge of English is highly preferred
  • Must have the ability to read, understand and follow both verbal and written company directives and initiatives
  • Must demonstrate knowledge and understanding of government policies and regulations
  • Must have the ability to use common sense to understand and carry out written and oral instructions

Job Qualifications

Job Duties

  • Follow the prep list created by chefs to plan duties
  • label and stock all ingredients on shelves so they can be organized and easily accessible
  • measure ingredients and seasonings to be used in cooking
  • prepare cooking ingredients by washing and chopping vegetables, cutting meat etc.
  • undertake basic cooking duties such as reducing sauces, parboiling food etc.
  • prepare simple dishes such as salads, entrees etc.
  • maintain a clean and orderly kitchen by washing dishes, sanitizing surfaces, taking out trash etc.
  • ensure all food and other items are stored and labeled properly
  • comply with nutrition and sanitation guidelines
  • perform other kitchen duties as assigned
