Olde Mecklenburg Brewery (OMB) is a distinguished craft brewery based in Charlotte, North Carolina, renowned for its dedication to traditional German brewing techniques and high-quality beer production. Established in 2009, OMB has emerged as a cornerstone in Charlotte’s vibrant beer scene, celebrated for brewing beers in strict adherence to the Reinheitsgebot, the German Purity Law dating back to 1516. This law mandates that beer should be made strictly from water, barley, hops, and yeast, ensuring purity, authenticity, and quality in every batch. Over the years, OMB has cultivated a loyal following of beer enthusiasts and families alike, attracted by its welcoming atmosphere, diverse beer portfolio, and engaging community events.

OMB’s original location is strategically situated in the Lower South End (LoSo) neighborhood of Charlotte. This flagship brewery combines a cutting-edge production facility, a full-service restaurant, and an expansive one-acre biergarten, offering guests ample space to enjoy delicious craft beers alongside thoughtfully prepared food. In addition to producing a range of traditional German-style lagers, OMB frequently experiments with seasonal brews, showcasing their innovative spirit while honoring time-tested brewing heritage. The brewery’s beers are distributed throughout North Carolina through an independent wholesaler network, making their prized brews accessible to a broad audience statewide.

In Spring 2024, OMB expanded its footprint by launching a second location in the Ballantyne neighborhood of South Charlotte. The new venue is an impressive 14,000-square-foot, two-story restaurant and biergarten designed to accommodate more guests and provide an enhanced experience for craft beer lovers. This expansion marks a significant growth milestone for the brewery, reinforcing its commitment to delivering exceptional products and memorable customer experiences.

About the Role

The Prep Cook at OMB plays an essential role within the Culinary Team, reporting directly to the Executive Chef. This position is based at the Lower South End (LoSo) location and entails preparing ingredients and components that support the daily kitchen operations. The Prep Cook is responsible for accurate ingredient measurement, washing, peeling, and chopping vegetables, fruits, and herbs, and preparing proteins, sauces, and condiments with meticulous attention to quality and presentation. They are expected to maintain cleanliness and organization in their workspace, follow all culinary and health department guidelines, and collaborate closely with both the Culinary and Service Teams to ensure smooth kitchen operations.

This role requires proficiency with various kitchen tools, including knives, slicers, food processors, blenders, and mixers. The Prep Cook must keep stations stocked and maintain par sheets, ensuring readiness during meal periods. Additional responsibilities include assisting in catered event execution and performing duties assigned by the Executive Chef. This position offers an hourly wage of $15 to $17 based on qualifications, along with comprehensive benefits for full-time employees, such as medical, dental, and vision insurance, a 401k plan with matching contributions, employee discounts, and a beer stipend. Job Qualifications

  • Knowledge of professional cooking and knife handling skills

  • Ability to transport up to 50 pounds

Job Duties

  • Prepare ingredients for daily prep pars
  • Organize and measure ingredients accurately
  • Wash, peel, and chop vegetables, fruits, and herbs
  • Prepare proteins
  • Prepare sauces, dressings, and other condiments
  • Label and date prepared items to ensure freshness and proper rotation
  • Safely utilize kitchen equipment such as knives, slicers, peelers, food processors, blenders, and mixers
  • Maintain a clean and organized workspace
  • Ensure that each OMB food item is prepared with the highest quality care, and craftsmanship
  • Follow all recipes and guidelines set forth by culinary management
  • Ensure that all stations remain stocked before and during the meal period and that logs and par sheets are maintained
  • Follow food service guidelines set forth by the health department
  • Perform additional duties, although not detailed, as requested by the Executive Chef
  • Assist in catered event execution
