This position is for a Prep Cook at the Waco Convention Center, where hands-on food preparation is integral to maintaining the highest standards of food quality and guest satisfaction. As a Prep Cook, you will play a crucial role in supporting the kitchen team by assisting the Executive Chef and fellow cooks in preparing menu items in accordance with ASM Global’s Food and Beverage Standard recipe book. This role requires attention to detail, adherence to sanitation and safety protocols, and the ability to work efficiently within a fast-paced environment.
The Prep Cook is responsible for preparing hot food items across various stations such as Fry/Sauté, Broiler/Roast, Breakfast, and Stock, Soups, and Sauces, among others. Maintaining consistency in food preparation and presentation is essential to enhance the guest experience. Furthermore, the Prep Cook must uphold all safety and health regulations, ensuring a clean and safe working environment.
The position demands flexibility in scheduling, including availability to work nights, weekends, and holidays, reflecting the dynamic nature of event schedules at the convention center. ASM Global also emphasizes teamwork, requiring the Prep Cook to work well with fellow staff, take direction promptly from the Executive or Sous Chef, and contribute positively to the kitchen’s overall operations.
This role requires a minimum of one year of hands-on experience in a food preparation environment and a high school diploma or equivalent. Preference is given to candidates with prior facility or industry experience and knowledge of food safety practices. While Serv-Safe certification or its equivalent is preferred, it is not mandatory for application.

Job Duties
- Assist the Executive Chef and cooks in following and maintaining standard recipes as listed in the ASM Global Food and Beverage Standard recipe book
- Maintain safe and sanitary working conditions and environment
- Assist in preparation of menu items as directed on Production Sheet
- Maintain quality food production standards
- Prepare hot food items for any or all of the work stations including Fry/Sauté Station, Broiler/Roast Station, Breakfast Station, Stock, Soups, Sauces Station
- Follow all rules and regulations set by ASM Global
- Safely operate all equipment
- Maintain safety, sanitation, and health code standards
- Work a flexible work schedule including nights, weekends and holidays
- Perform other duties as assigned by the Executive and/or Sous Chef(s)
