The Prep Cook position at Logans Roadhouse is an essential role within the kitchen team that involves preparing food items and ingredients to support the smooth operation of the kitchen. The Prep Cook is responsible for executing basic food preparation tasks as directed by the Chef or Kitchen Manager, ensuring that all prep work is completed accurately and efficiently before service begins. This role requires strict adherence to recipes and cooking methods to guarantee the quality and consistency of menu items.

A typical day for the Prep Cook includes preparing soups, meats, vegetables, and desserts by measuring, mixing, cutting, and trimming ingredients as needed. The Prep Cook must also maintain cleanliness of the prep areas, sanitize workstations and equipment, and follow all regulatory and company guidelines for food safety, including the prevention of cross-contamination. Proper use of personal protective equipment such as cut-resistant gloves is mandatory to ensure safety. This role also involves maintaining an organized workstation by following a "clean as you go" approach and assisting with dishwashing duties when required.

The position demands physical stamina and the ability to perform various movements such as lifting, bending, squatting, and standing for extended periods throughout the shift. Sensory abilities including good vision, hearing, and touch are important for safely handling kitchen tasks and equipment. Job Duties

  • Prepares and cooks food requiring longer preparation time
  • Ensures that the daily prep tasks are completed prior to service
  • Follows basic recipes and/or product directions for preparing, seasoning, cooking, tasting, carving and serving soups, meats, vegetables, desserts and other foodstuffs for consumption in eating establishments
  • Prepares items as dictated by prep sheet needs
  • Prepares food by operating a variety of kitchen equipment to measure and mix ingredients, washing, peeling, cutting and shredding fruits and vegetables, and trimming and cutting meat, for culinary use
  • Tastes products, checks production, and keeps records to accurately plan production requirements and requisition supplies and equipment
  • Cleans and sanitizes workstations and equipment and follows all company and regulatory rules and procedures
  • Uses proper measurements as stated in recipes when preparing food
  • Retrieves all items required for prep from dry storage and the walk-in cooler to set up workstation
  • Follows proper protocol for cooling prepped items in compliance with food safety guidelines
  • Follows protocol to prevent/mitigate risk of cross contamination
  • Keeps a clean workstation while working using the "clean as you go" mentality
  • Uses proper PPE such as cut gloves to prevent cuts
  • Assists with cleaning dishes, utensils, and other food containers in the dish area as needed
