Delaware North is currently seeking a Premium Club Chef to join their team at Caesars Arena in Detroit, Michigan. Caesars Arena is a premier 20,000-seat venue that hosts major sports teams such as the NHL's Detroit Red Wings and the NBA's Detroit Pistons. The arena features premium club areas, loge boxes, and suites, offering guests high-quality dining and concessions options. As the Premium Club Chef at Caesars Arena, you will play a critical role in supporting the Executive Chef with the management of a high-volume kitchen operation. This role involves overseeing the culinary team to ensure efficient production, adherence to recipe standards, and exceptional food quality. You will have a direct impact on both the dining experience of guests in exclusive premium locations and the overall success of culinary operations within the venue. The position requires not only excellent culinary skills but also creativity, leadership, and a strategic mindset to develop menus and manage costs. This is a full-time position offering an anticipated salary range of $61,200 to $82,600 per year. Alongside the base salary, Delaware North offers an annual bonus plan based on performance and opportunities for uncapped sales incentives.

Job Requirements

  • Minimum of 3 years of culinary experience with management responsibilities
  • Proven leadership and team management skills
  • Knowledge of high-volume food production and kitchen operations
  • Familiarity with food safety regulations and sanitation standards
  • Proficient computer skills including Microsoft Word and Excel
  • Ability to obtain necessary food safety certifications
  • Flexibility to work varied shifts including evenings, holidays, and events

Job Qualifications

  • Minimum of 3 years of culinary experience with previous management responsibilities in a large production kitchen or high-volume food and beverage operation
  • Exceptional skills in high-volume cooking, food presentation, and precise recipe adherence with the ability to lead, coach, and motivate a diverse team
  • Knowledge of best practices for monitoring food and labor cost, menu development, costing, ordering, inventory, and food safety and sanitation
  • Proficient computer skills, including Word and Excel
  • Ability to obtain ServSafe, Food Safety Handler, and Training for Intervention Procedures certifications
  • Capacity to work a flexible schedule to accommodate business levels

Job Duties

  • Supervise and lead the culinary team, ensuring production efficiency, proper culinary techniques, adherence to recipe standards, and high-quality food preparation
  • Assist in hiring, training, and mentoring team members, while creating a cohesive work environment
  • Support food and labor cost management, prepare schedules, oversee inventory control, and manage ordering and receiving processes
  • Collaborate with the Executive Chef and culinary team in menu design and recipe development, utilizing expertise in costing and writing bulk recipes
  • Maintain a safe, sanitary, and organized kitchen that complies with state and local health department regulations and company policies
