The role we are seeking to fill is that of a Food Production Cook, a pivotal position within our culinary team responsible for preparing and producing high-quality food items according to established guidelines and recipes. The Food Production Cook will work closely with kitchen management to review production sheets and recipes, accurately measure and mix ingredients, and skillfully operate various kitchen equipment such as blenders, mixers, grinders, slicers, and tenderizers. The role also involves baking, roasting, broiling, steaming, carving, slicing, garnishing, and displaying food items in a manner that complies with our established presentation standards.
Additionally, this role entails maintaining precise time and production records, monitoring food temperatures, and managing inventory storage and rotation to minimize waste and control costs. The ideal candidate must be knowledgeable about food safety and sanitation practices, including proper handling techniques to prevent contamination, and must be committed to following departmental standards for safe food preparation and storage. This position also requires the ability to adapt recipes to accommodate dietary restrictions and special nutritional needs, ensuring all meals meet specific patient or customer requirements. Successful candidates will demonstrate strong interpersonal skills for effective team collaboration and communication.
This position requires the Food Production Cook to have at least three years of experience in similar food production environments, a high school diploma or equivalent, and the ability to obtain ServSafe Food Handler certification within the first year of employment. Physical demands include the ability to stand, walk, bend, reach, and lift various weights throughout the workday, as well as safely handling kitchen equipment and sharp utensils. Job Duties
- Review production sheets and recipes to ensure quality and quantity needed for items to prepare
- prepare food on daily production report according to established guidelines
- maintain time and production records
- measure and mix ingredients according to recipe
- use a variety of kitchen utensils and equipment including blenders, mixers, grinders, slicers and tenderizers to prepare soups, salads, gravies, desserts, sauces and casseroles
- bake, roast, broil and steam meat, fish, vegetables and other foods per recipes
- carve and slice meats and cheese
- garnish, display and serve food items according to standards and recipes
- ensure proper storage and rotation of inventories in refrigerators and freezers
- monitor food temperatures and utilize established procedures to ensure safe food handling techniques and prevent bacteria contamination
- follow department standards for safe food handling, storage and sanitation
- maintain temperature logs for production areas per department standards
- monitor accurate portioning and promote food waste control
- prepare in small batches to help control waste and cost
