The Playbook Assistant Manager role at Graton Resort & Casino is a pivotal leadership position within the resort's sports bar and restaurant operations. As the assistant manager, you will play an integral part in supporting both the strategic and operational aspects of the venue. This involves working closely with the General Manager to uphold brand standards and ensure operational excellence while delivering an exceptional guest experience. This full-time position demands a hands-on leader with excellent communication skills, sound judgment, and the capability to motivate and guide a diverse team in a fast-paced, sports-themed environment.

In this role, you will assist with daily front-of-house operations, staff supervision, financial monitoring, and guest engagement. A key responsibility is to cooperate with the General Manager in planning and executing sports programming and themed events, including major sporting events such as UFC, NFL, Boxing, NBA, NHL, NCAA, Soccer, and high-profile events like the Kentucky Derby. This entails overseeing scheduling, preparation, and broadcast coordination to guarantee seamless event presentation throughout the venue. Beyond event coordination, you will support promotions, viewing parties, and marketing initiatives designed to boost guest interaction and position the sports bar as a prime destination for sports enthusiasts.

As an essential member of the leadership team, you are expected to lead by example, demonstrating professionalism, encouraging teamwork, and ensuring consistency in service excellence across all touchpoints. Your role is critical in redefining hospitality standards within the resort while fostering a positive and motivated work culture. Additional responsibilities include managing compliance with health, safety, and sanitation regulations, budgeting and financial forecasting, labor management, cost control, and collaborating with Food & Beverage leadership to maintain menu quality and brand alignment.

The Playbook Assistant Manager is also tasked with resolving guest concerns professionally and efficiently to maintain high levels of satisfaction. Effective coordination of staff scheduling and station assignments is necessary to optimize operational flow and workforce productivity. Working closely with the Special Events and Marketing teams, you will contribute to the promotion and successful execution of events designed to enhance the venue's visibility and drive revenue growth. Job Requirements

  • Effective communication skills in English
  • Minimum 5 years of restaurant management experience
  • At least 2 years managing profit and loss in similar settings
  • Strong understanding of restaurant operations and financial management
  • Culinary skills for all kitchen operations
  • Ability to work independently
  • Flexible work schedule availability
  • Must be at least 21 years old
  • Possession or ability to obtain California Food Handler Certification

Job Qualifications

  • Must be at least 21 years old
  • California Food Handler Certification or ability to obtain
