This job opening is for the highly specialized role of Pastry Chef aboard a Disney Cruise Line ship. The Pastry Chef plays a crucial role in the culinary team by creating exquisite desserts, pastries, and cakes that enhance the overall dining experience for guests. Collaborating closely with the Executive Pastry Chef, the Pastry Chef helps develop and refine menus, ensuring creativity and quality remain paramount. Beyond the kitchen craft, this position also carries significant leadership responsibilities, including guiding and training team members, overseeing kitchen operations, managing allergy protocols, and ensuring compliance with Disney Cruise Line’s stringent safety and sanitation standards.

The role demands a high level of technical knowledge about food preparation and display, combined with an artistic flair for creating visually stunning and delicious pastries and showpieces. Job Requirements

  • A minimum of five years of recent experience as a Pastry Chef or Pastry Chef de Partie
  • certification as a Pastry Chef or a comparable degree in Culinary Arts
  • strong technical knowledge of food and beverage operations on a ship
  • a proven history of producing high-quality products
  • at least 21 years of age
  • fluent in spoken and written English
  • willingness to live and work on board a ship for specified durations
  • ability to work a seven-day, 70-84 hour work week with limited breaks
  • compliance with Disney Cruise Line appearance standards
  • willingness to share a cabin with other crew members
  • a commitment to working in a busy, fast-paced, guest-focused environment
  • flexibility in work schedule, responsibilities, and locations
  • appreciation for diversity among guests and crew members

Job Qualifications

  • Certification as a Pastry Chef or a comparable degree in Culinary Arts

  • fluent in spoken and written English

Job Duties

  • Collaborate with the Executive Pastry Chef to develop, maintain, and enhance all approved menus aboard the ship
  • craft an array of desserts, cakes, and pastries that delight guests
  • assist in the setup of buffet stations for exceptional dining experiences
  • guide team members in the preparation of pastries, cakes, and creams
  • ensure adherence to opening and closing protocols for kitchens and production areas
  • lead training for Pastry staff on allergy awareness and dietary considerations in line with company guidelines
  • supervise the preparation of special dietary meals and manage food allergies for guests and crew
  • delegate tasks and monitor operational responsibilities of the kitchen team
  • strive to surpass guest expectations while ensuring safety and quality at all times, taking corrective action when necessary
  • uphold Disney Cruise Line and USPH sanitation standards in all relevant areas
  • ensure presentation and preparation of menu items meet high standards
  • create stunning showpieces, displays, ice creams, and sorbets, accommodating special requests
  • engage in Castaway Cay-related duties as directed by DCL leadership
  • handle additional responsibilities assigned by DCL leadership based on operational needs
  • follow all company policies and maritime regulations diligently
  • participate in emergency duties as outlined in the ship Assembly Plan
