The Country Club of Virginia is currently seeking a skilled and dedicated Pastry Sous Chef to join its renowned culinary team. This is a full-time position with working hours from 12:00 PM to 10:00 PM, including weekends and holidays. The role supports the Executive Pastry Chef by overseeing all afternoon and evening pastry operations within the club's bakeshop. The Pastry Sous Chef will be an essential leader responsible for supervising, training, and motivating a team of five pastry professionals to consistently deliver high-quality desserts, baked goods, and plated presentations. These offerings cater to a range of services including à la carte dining, banquets, and special events.
This position demands a strong leader with a refined skill set in classical and modern pastry techniques, baking, plated desserts, and chocolate work. The ideal candidate will demonstrate excellent organizational capabilities, the ability to manage daily production and prep schedules efficiently, and a passion for culinary excellence within a private club environment. The Pastry Sous Chef will also assist with menu development, seasonal specials, and unique desserts tailored for special events, ensuring the club maintains its reputation for high standards and sophisticated culinary artistry.
The role requires close collaboration with culinary leadership and other departments to meet and exceed the expectations of members and guests, maintaining high standards of cleanliness, food safety, and presentation. The Pastry Sous Chef will also play a vital part in inventory management, waste reduction, and product usage monitoring. In the absence of the Executive Pastry Chef, this role will step into leadership, ensuring the continued smooth operation of pastry services.

Job Qualifications
- Minimum of 3-5 years of professional pastry experience including supervisory or leadership experience
- Formal culinary or pastry education preferred or equivalent hands-on experience
- Strong knowledge of classical and modern pastry techniques baking plated desserts and chocolate work
- Proven ability to lead train and motivate a diverse team
- Excellent time management organization and multitasking skills
- Experience in a private club fine dining luxury hotel or high-volume banquet environment preferred
- Strong attention to detail and commitment to consistency and presentation
- Ability to work PM shifts weekends holidays and special events as required
- ServSafe or equivalent food safety certification or ability to obtain
Job Duties
- Lead and supervise PM pastry operations ensuring smooth service for à la carte dining banquets and special events
- Manage train and mentor a pastry team of five fostering a positive professional and collaborative work environment
- Ensure consistent quality presentation and flavor across all pastry and dessert offerings
- Execute daily production prep schedules and service requirements efficiently
- Assist with menu development seasonal features and special event desserts
- Maintain high standards of cleanliness organization and food safety in accordance with health regulations
- Monitor product usage minimize waste and assist with inventory and ordering
- Collaborate with culinary leadership and other departments to meet member and guest expectations
- Step into a leadership role in the absence of the Executive Pastry Chef as needed
