The Pastry Sous Chef role at Eataly is a vital position within this celebrated marketplace. Reporting directly to both the Executive Chef and functionally to the Head of Pastry, the Pastry Sous Chef is responsible for overseeing the production of all pastry items, which includes a wide variety of Italian pasticcini, cakes, desserts, cookies, candies, and other traditional dolci. Managing a dedicated pastry team of approximately 10 employees, the Sous Chef plays a critical role in maintaining the high standards for taste, texture, and presentation that Eataly is known for.

This position demands both strong leadership and hands-on culinary skills. The Pastry Sous Chef supervises and actively participates in the production process, ensuring that every pastry product served in Eataly’s counters and restaurants meets stringent quality standards. Beyond production, the role involves scheduling, payroll submission, team training, and motivational support to help develop the skills of the pastry team in Italian pastry techniques and best practices. The Sous Chef must also manage ordering and maintaining inventory for the pastry shop, ensuring seamless operations and food safety compliance according to Department of Health standards.

As an hourly role offering a wage between $20.00 and $23.00, this position requires flexibility to work onsite with varied schedules often including evenings and weekends. The ideal candidate will have at least four years of experience in high-volume pastry preparation, a deep knowledge of Italian pastries, strong leadership capabilities, and intermediate computer skills. A degree from a post-secondary culinary or pastry arts program is preferred but not mandatory.

Job Requirements

  • Availability to work onsite with a flexible schedule often including evenings and weekends
  • Ability to lift up to 50 pounds
  • Ability to exert well-paced mobility for up to 8 hours, including standing, walking, bending and squatting
  • Ability to use a burning oven, commercial stand mixer and other pastry baking equipment

Job Qualifications

  • 4+ years of experience in a high-volume pastry preparation position
  • Knowledge of Italian pastries and techniques
  • Excellent communication and leadership skills
  • Intermediate computer skills
  • Degree from a post-secondary culinary or pastry arts training program preferred

Job Duties

  • Supervises and participates in the production of all pastry items for Eataly's counters and restaurants
  • Assists in managing the pastry team including scheduling, payroll submission, providing feedback and motivation, training on Italian pastry production, principles and practices, coaching and counseling
  • Verifies all foods prepared meet quality standards in terms of portion size, flavor, texture and consistency
  • Produces decorative centerpieces and special orders
  • Orders and requisitions all supplies for the pastry shop
  • Maintains a clean and sanitary food production area according to Department of Health standards
  • Performs other duties as required or assigned
